@MamaintheValley: Fun! And yes, the regular unsweetened cocoa powder is the best to use, not the Dutch dark that it calls for. I've done it both ways, and it comes out better with the cocoa powder that is not as heavy.

@foodiebee: I've decided to make the Salted Caramel Chocolate Pecan Pie! Thanks so much for the suggestion. I just have regular Hershey's unsweetened cocoa powder on hand, is that what you used?

@PinkElephant: It really is next level! It rarely lasts longer than a day. The bottom becomes like a fudgy brownie consistency, then the pecan layer, and the salted caramel soaks into alllll of it. I always make homemade sweetened whipped cream to go with it, and it's a pretty perfect way to end the meal.

For those who want to up their pumpkin pie game, this Pumpkin Pie Spectacular lives up to its name:

@foodiebee: I've never made one, but was also going to suggest some sort of chocolate pecan pie as a "next level" recipe - the one you posted with chocolate AND salted caramel sounds amazing.

I'm not a fan of two-crust pies (even just a lattice top is a little too much crust for me), so I tend to do many of my fruit pies as "dutch" pies by adding a crumble/streussel topping. Apple is one of my favorites to do this way!

My family has a French silk pie recipe that’s been passed down for four generations (originally my great grandmother’s!) It is only 4 ingredients and requires epic amounts of whisking so I can’t imagine making it pre-electric mixers, but with a stand mixer it is a breeze to make and SO decadent and delicious. No joke, until my brother was in high school he wouldn’t eat pie—except this one.

I’m also thinking about a way to layer a little bit of pecan pie filling on top of pumpkin pie because I want both, but with 2 adults and a baby three pies is too much.

I always do pumpkin, but this year I’m also adding a chocolate cream pie. I made it last year for Christmas and it is so good! Not overly sweet, and really easy to make. We had an extra pie crust we were using, so we used a regular pie crust, which turned out fine.

https://houseofnasheats.com/chocolate-cream-pie/

Blackberry pear. I make this with a regular pie crust instead of the crumb topping:

I recommend cutting back a bit on the lemon zest.

DH loves chocolate pecan pie but it is too sweet for me so we use this Oatmeal Pecan Pie recipe with chocolate chips/chunks added.

https://www.myrecipes.com/recipe/oatmeal-pecan-pie

We haven't had it in years since DS has a tree nut allergy. DH really wants it this year and DS is probably old enough to understand he can't have it (and not throw a giant fit) so I think it might make an appearance this year.

Mmmm.. piiiieee...

My “signature” pie is apple blackberry and pairs well with vanilla ice cream. It’s been years since I made it so DH has requested it. I’ll probably also bake some mini pumpkin cheesecakes too!

Chocolate pecan is one I’ve seen that looks amazing but I’ve never tried, and I love the look of those fancy rosette style apple tarts.

I often volunteer to do dessert for our family Thanksgivings since I enjoy baking and I like that I can make it a day in advance. I typically do an apple tart, pear-cranberry streusel and a flourless chocolate torte. My family isn't big on pecan or pumpkin pie so these work well for us.

I make a peanut butter chess pie often. It's super easy, used normal pantry ingredients, and only one crust. I also make it non dairy with whatever oil I have on hand and it comes out fine. Sprinkle it with chocolate chips after it cooks for a chocolate top. https://www.crazyforcrust.com/peanut-butter-chess-pie/

I've made this recipe and it turned out well: https://www.google.com/amp/s/www.epicurious.com/recipes/food/views/pear-apple-and-quince-crostata-232818/amp
You could always combine other fall fruit like apple and cranberry to make something more interesting. If you can get it from the library or order it, I highly recommend the Hoosier Mama Pie Cookbook. It's a local pie shop, and all their recipes have worked well for me. Besides fruit pie, I like their chocolate chess pie, chocolate cream pie, and espresso cream pie.

In case I’m not the only one who is distracting herself from current events with Thanksgiving recipes!

I know this year won’t be the same with just our little crew at home, but one thing I can’t live without during this particular holiday is pie. So, I’d like to go all out with my pie baking this year and make something special.

What are some delicious ideas that go beyond the classic blueberry, apple, and pumpkin varieties? I’d love a variation on a pecan pie but am open to hearing what else you love!
