<description>&#60;p&#62;We did a lot of bread, soup, and salad.&#60;/p&#62;
&#60;p&#62;One night was chicken and rice soup using rotisserie chicken, but good use of any leftover turkey.  We served it with a chopped salad with blue cheese, glazed pecans, shredded carrots, crunchy wonton noodles, and a sweet-ish vinaigrette.  &#60;/p&#62;
&#60;p&#62;Another night we did vegetable beef soup with fresh hunks of crusty bread and a garden salad with lots of veggies (cucumber, tomato, carrots) and whatever dressing people wanted.&#60;/p&#62;
&#60;p&#62;I find brothy soups hit the spot with a heavy meal while still being filling.  Plus the soups were great leftover with an easy sandwich at lunch (like leftover chicken or turkey salad with Craisins!). And they can cook slow in the crockpot or fast on the stove!

<description>&#60;p&#62;How about something like vegetable beef soup and cornbread? Buy one of the bagged mixes for the soup, add 1lb cooked beef and some frozen veggies, use a cornbread mix.

<description>&#60;p&#62;DH's grandmother is coming for Thanksgiving and will be staying a few nights. I'm trying to think of a few easy, not too heavy, meals, to have the night before and days after Thanksgiving. I'm so out of the habit of cooking in general, and I'll be busy preparing food for Thanksgiving on Weds. &#60;/p&#62;
&#60;p&#62;So what are your favorite easy, not too heavy, meals to bookend the holiday? (I'm assuming we will have leftovers the day after of course!). Prepackaged is just fine, my standards are not high.
