Salad bar:
The day before rub, cook, cool, and thinly slice steak and chicken, then set it out with
Spinach and lettuce
Cucumbers and bell peppers and carrots and tomatoes
Cheese crumbles
Sunflower seeds
Hardboiled eggs
Avocado
2 or 3 dressing options

Serve with fruit salad and a cheese and cracker plate so she can have some carbs if she wants them.

Chicken salad is another option, but gingerbebes ideas are great. As long as you provide some strong protein components, and keep carbs on the side so she can choose what to have with it, you're good. A 10-15 minute walk helped me somewhat, but didn't always do the trick. She'll know what foods trigger more than others (some can't have any fruit, some can't have dairy, and for some, bread doesn't cause spikes at all).

Egg casserole (aka crustless quiche) with low sugar fruit like melons and berries. Turkey bacon, whole grain toast and pastries for the regular folks. LaCroix to drink.

Greek food bar - grilled chicken, whole wheat pita or pita chips, hummus, olives, Greek salad fixings, a chickpea salad, sugar free lemonade spritzer. Fruit salad.

Also the best thing for GD is a little exercise after a meal so she can probably eat a little more freely if she can take a quick 10-15 minute walk around the block. Maybe she can walk your dog if you have one.

Some friends are coming over for a late lunch/early dinner this weekend. My girlfriend is due in May and has GD. I have no idea what to make. Brunch is my fave to cook for. Not sure why I'm struggling. Probably because football is over and I have to cook normal food again.
