<description>&#60;p&#62;Hi, I rarely post and am just recently getting back into HB but I had to comment with this delicious recipe. I've made these twice in the last couple of week and our family is loving them!&#60;/p&#62;

&#60;p&#62;A few subs I made:&#60;br /&#62;
- I use King Arthur's white whole wheat flour&#60;br /&#62;
- I used coconut oil instead of butter (I love the slight coconut flavor it adds to the muffin). The sub is 1:1.&#60;br /&#62;
- I add a few raisins to the mix but you can leave these out and it's still delicious.&#60;br /&#62;
- I use a little less honey to reduce the sugar.&#60;br /&#62;
- The second time I made these, I made them into mini muffins and used grated zucchini (used a cheese grater) instead of carrots. I squeezed the zucchini dry to avoid making the muffins overly wet. &#60;/p&#62;
&#60;p&#62;So delicious! The website also has other great recipes if you are looking for inspiration. :)

<description>&#60;p&#62;My 18 month old is going through an extremely picky phase. She won't touch her &#34;favorite&#34; foods, and is hardly trying anything new. I'm totally at my wit's end when it comes to meal time these days, and I'm really hoping this stage will end soon. &#60;/p&#62;
&#60;p&#62;She will (sometimes) eat muffins, though! So, do you have a super awesome muffin recipe? One that is packed with protein (I'm thinking made with greek yogurt), maybe some hidden veggies, and other nutritious food? Oh...and you know, it needs to taste good!
