I make egg quiche cups in a muffin pan filled with every sort of veggie imaginable (spinach, tomatoes, shredded squash or zucchini, shredded carrots, onions, peppers, etc). They freeze great and heat up quick.

Also, pancakes or waffles made with whole grains and a veggie like zucchini, carrots, sweet potato, or pumpkin added freeze really well and can be popped in the toaster in the morning for a quick healthy meal.

You can also make breakfast burritos with whole grain tortillas filled with scrambled eggs and sauted onions and peppers, etc.

For DH's breakfasts I make sandwiches with whole grain english muffins with an egg quiche inside, and then a "sausage" veggie burger I make from an oatmeal base.

Smoothie bags are great too - just stick some frozen fruit and plain yogurt into a ziplock bag, and then when you're ready to eat it dump the whole thing into the blender with some milk and you have a quick delicious smoothie!

@blackbird: You are making me so dang hungry today. Tamales, breakfast burritos... haha! If I weigh 10 lbs more at my next OB appointment Monday you're to blame!

Seriously though, I *love* breakfast burritos. And DH works a lot of nights and craves breakfast food overnight, so that's a perfect idea for him too.

Yeah, I'd second burritos. I always have some burritos frozen for nights when I'm too tired to cook dinner, and there are a ton of great breakfast options with tons of protein.

Breakfast burritos; you can freeze them and make them!

You can also make egg 'muffins' or quiche

These are my favorite grab and go breakfast: Baked Oatmeal to Go. I use honey instead of Stevia. http://pinterest.com/pin/215609900880449421/

@MapleMoose: I think that is the recipe I used.

I just did normal oats plus skim milk with some flax seeds as extra. I think you can play with the liquid:oatmeal ratio depending on how dry/soupy you like your oatmeal.

Also, my family did not like the nuts with it. Just cinnamon and apples.

I saw this recipe on Pinterest -- Slow Cooker Apple Oatmeal -- but I haven't tried it yet. Looks so yummy and I bet it makes the house smell wonderful.

There is a really great apple and oatmeal crock pot recipe that I used for my family on Christmas. Even my mom who doesn't like oatmeal liked this because it tasted like apples.

I do make-ahead breakfasts every week. Usually I make crustless quiche with spinach. But I've also made egg casseroles with a million varieties of mix-ins. I make them on Sundays and then just reheat a slice each morning.

I usually eat paleo-ish, but for the last two weeks I had mad cravings for oatmeal, so I made overnight oats, which are super easy. Combine 1/3 c. rolled oats with 1/3 c. each of plain Greek yogurt and almond milk (or other milk) and let sit in the fridge overnight. In the morning I toss in fruit and some nut butter. You can eat cold of heat slightly in the microwave.

You can also pre-make smoothies and store them in freezer bags, and then just pop in the blender with milk/almond milk/your liquid of choice. Like this: http://www.muffintinmania.com/2011/07/green-smoothie-cups.html

As you can see, I love me some make-ahead breakfasts...mostly because I also love being able to sleep a long as I can and still have time for a decent breakfast!

Does anyone have any good recipes for make-ahead or crock pot breakfast items, or quick breakfast foods? I'm trying to cut down the amount of sugar and breakfast cereal I eat, and add more protein. A bowl of Cheerios every morning just isn't cutting it for me anymore...I get so hungry by 9 a.m.!
