@locavore_mama: I use this http://www.skinnytaste.com/2012/09/easy-pumpkin-spiced-granola.html?m=1

I don't think the ingredients are expensive (and I have to buy gluten free oats :)) I do leave out the pepitas because they aren't sold around me.

@locavore_mama: the flour tasted off.. I can't explain it. I don't even want to tell you how old the flour was. I thought the off taste would bake off, but it didn't. I had to throw them all away and it was pretty sad.

@scg00387: so the verdict is I do like it.
I intended to use some milk instead of just water but only had 1.5 cups of milk. Also didn't have dessicated coconut so I used sweetened coconut flakes instead. I'd happen to wake up last night at 3am so I went to check on it and the edges were starting to "burn"! So I added another cup of water. Next time I make it I will use 6 cups of liquid in lieu of the 4 they ask for. Also I think I will cook it at the 10 hour setting so it's low and slow. I think that might help with the edges "burning".

As for the gumminess. It definitely softened the oats. You can still see the round shape but it's not crunchy. So if you like it a little more al dente I would perhaps stop it at 7 instead of the 8 the recipe calls for?

LO absolutely loved it. :)

@mrsjazz: mmm yum! I will try that one next! I was thinking as I was making them that next time I will grind the oats into a flour to make them less dense.

@TurtleDoves: yes, definitely double the blueberries!!! 1 cup was not enough. Also I added 3/4 cup of milk bc the batter was too thick imo. By the time I was done with it the recipe made 16 muffins! hahaha

@Kimberlybee: yes, it's a huge time saver! My trick is I make a full recipe of breakfast on the weekends and freeze the rest.
I have a ton more recipe in a Pinterest board if you're interested. Most of which I have tried.

@locavore_mama: @TurtleDoves: I made some similar muffins over the weekend that called for oat flour and oats, you could add other fruits besides banana. I made the recipe without brown sugar, subbed coconut oil instead of sunflower, and used reg. greek yogurt & whole milk.

http://honestfare.com/yogurt-banana-oat-muffins/

@locavore_mama: Quinoa flour is......earthy? grassy? It is possible that the vanilla extract and yogurt can override that taste though. I guess I won't try it. I was just aiming to cram a little more protein in there.
Also, for the sweetness, possibly doubling the blueberries.
I think i'll do:
no honey, no sugar, one banana and double the fruit. If that is too thick or not sweet enough, I can try vanilla greek yogurt instead the next time around.
I would also like to try raspberry.

I was thinking about doing this for DH with breakfast sandwiches. He doesn't always have breakfast and sometimes doesn't get a chance to eat at work. When I was working & when I start work on Monday I will go back to bringing my fridge oats that I just make the night before. LO basically has the same breakfast M-F only with a variation on the type of fruit so she's easy, too.

@TurtleDoves: I've never use quinoa flour before. What flour would you compare it to? If it's dense like buckwheat I wouldn't bc even though they were super moist they were denser the next day.
And yes I would totally omit all sugar. Next time I might just do honey only bc we only buy plain Greek. And honestly without the honey and only half the sugar they were not sweet at all so I would feel comfortable omitting all sugar. My LO gobbled a whole muffin down just fine

@scg00387: what don't you like about the kitchn one? Do they use tolled or steel cut oats?

@locavore_mama: Do you think the power muffins would taste dramatically different with gluten-free quinoa flour instead?
Also, maybe we could sub the sugar for vanilla flavored greek yogurt instead? Less sugar that way. But, I don't know how that may compromise the taste. Or a very mushy banana.

@lavender: We usually go through them within a week so I just throw them into Tupperware. When I freeze pancakes and waffles I use saran wrap, individually wrapping each piece then layer like a accordion. Then I also wrap the whole stack again in saran wrap.
I usually put it the fridge the night before to defrost then DH pops them in the oven at around 250F. We don't have a microwave. :)
