I feel like if there is a table of toppings there is going to be a line or a wait for people anyways so why not do it as part of the line? We did this with waffles and used 4 irons and it worked great. No real waits.

I sometimes make the batter the night before. And then in the morning, it's just a matter of throwing the batter in a hot pan!

Sometimes we make them the night before but the kids don't eat them as well so I guess they can tell Not sure if your guests would be able to tell or if our kids are just picky.

@pui: I freeze leftover pancakes all the time when I make them on the weekends. Generally I defrost in the fridge overnight then reheat in the morning in the oven at 150-200 for about 10 minutes. They're not as good as fresh but still good. Some recipes freeze and reheat better than others!

ETA: I've done what @mr bee has as well when we're planning a big brunch. I do notice the batter thickens a bit overnight so in the morning you'll have to add some liquid to loosen it up. But making all those pancakes is still a lot of work compared to throwing it in the oven! I highly recommend borrowing a stove top griddle if you don't have one!

I've never done it but I think I heard they can freeze well.

Cool idea!

I'm planning a wedding shower brunch for my SIL. We want to do a pancake buffet with plain pancakes and options for adding fruit, whipped cream, maple syrup, nuts, etcect.

The shower is pretty big (We have a guest list of 40 people). Do you think we could make the pancakes the day before, refrigerate/freeze them and then heat them back up in the oven the morning of the shower just before serving? Since we already need to decorate and set everything else up that morning, I think that would be way easier on us!
