I spent way too much time making them, lol! I either had a huge chopped salad or a bacon, egg & avocado on english muffin.

oooh i like the idea of marinating chicken and just throwing that on top of salad. It's so sad but I can't for the life of me remember what I ate last time, at all. I know I ate a lot of apples, but nothing about meals. It was winter so I'm guessing soup.

Oh yeah, we grilled a lot, too! I did a lot of salads with chicken and some fresh vinaigrette of some kind on top. But you can buy a lot of meat, marinate it individually, and then just bust it out as-needed

I used to marinade chicken breast and keep in the fridge portioned out and then I made a huge Tupperware container of chick pea salad with kale and feta. It was great not having to think about it

Dh and I are going to make a run to Sam's Club this weekend to stock up our deep freeze for maternity leave. I want to eat fairly healthy on leave as I'm going to be working on losing the baby weight and training for a 5K after I get the okay from doctor. What did you eat, what are some of your favorite frozen options that are healthy that I can put in the freezer?

Note: I'm not doing freezer meals this round, being spring/summer we use our grill most nights, so I would rather stock the fridge with meat options to throw on the grill!
