I second the crockpot idea if you can. Once you put everything in there you can forget about it and focus on all your moving tasks.

Here are a few things I make in the crockpot:
roast with potatoes, carrots & onions(DH loves when I add A1)
chili
chicken noodle soup (i use a mix as a base can't remember the brand, then add real chicken and fresh baby carrots)
pork with bbq sauce (then shred & serve on buns)
chicken nachos (dump 1 jar salsa, 1 can black beans in crock pot with a few chicken breasts. shred & serve with chips, cheese etc.)

Can you use your crockpot? Throw in some meat, cover with salsa, and when it's done you can use it for everything! Also, the jar salads from the blog post last week (2-3 weeks ago?) look yummy.

Huge pot of homemade soup, lasts for days. We sometimes buy those frozen premade meals (healthier ones!) and add a crap load of frozen veggies to it. Throw it all in a pan for 10-15 minutes..bam! Done.

Salad and grilled (or broiled) meat/fish takes less than 15 minutes from start to table! As long as you don't use heavy salad dressing, it's very healthy!

Pesto pasta or marinara sauce over pasta.

Haaaalp!

We are in the midst of our move (yay!) But...that means we've eaten a lot of pizza and need to eat healthier meals at home. Help with suggestions of easy meals that aren't too time consuming, please? :-D

If I order another pizza or cheeseburger my a$$ is going to grow 3 sizes!
