It's all about balancing protein and carbs. I'm a type 2 diabetic, and daily walks are huge, especially if you do it right after a meal, before she has to test again. Also, realize that dairy, fruit, and starches all contain carbs, so she has to balance them. Essentially, anything that ends in -ose (lactose, glucose, fructose, etc) has the ability to raise her sugar and must be eaten with some sort of protein to balance it out. I know that for me, meals like chicken/rice/veggies, or enchiladas, or snacks like sugar free cookies/milk/nuts don't cause me to spike and are pretty filling.

It really depends on the protein, not all proteins are great for GD. For instance, milk protein i.e. lactose is higher in sugar than chicken breast. She should eat dairy, but I would def not go overboard. I didn't have any special recipes, but for me I started really trying to figure out via my food log and glucose exams, which foods triggered higher spikes and just tried to eat as healthy as possible. I'm sorry to hear about you friend, it's great she has someone like you to lean on. Also exercise is really key for maintaining GD as it helps burn the extra glucose. Maybe going on some daily walks with her would be helpful if she is able.

Lots of protein and veggies! I made an eggplant lasagna that was super good. It tastes awesome out of the freezer too. Basically make a regular lasagna but instead of pasta, use eggplant slices. Super GD friendly and so good! Put lots of cheese and tomato sauce on it (check the tomato sauce to make sure it doesn't have sugar or anything in it). She'll love it!

Did you see this recipe blog? http://gestationaldiabetesrecipes.com/

There are lots of ideas! That salad in particular looks delish! So does the red beef curry.

Ok, guys, I need some help. A good friend of mine is going through a lot with her high risk pregnancy (with twins!). She's had lots of complications including gestational diabetes. Some of us are getting together to provide meals from now until the babes are born (cross your fingers for December). What foods did you especially like if you had GD? What are the dietary restrictions? I'm assuming high protein/fiber? I'm in a food rut with no restrictions, so any help is appreciated!
