@mrs. bird: They really aren't too hard. Or you can just make a regular lasagna.

@mrs. bird: when my husband was wheelchair bound after a leg surgery & I had to work, I would pack him a cooler in the morning before I left for work. We had a galley kitchen and he couldn't get in it in his wheelchair.

I would put ice, water, pop, juice, and whatever he wanted for lunch that day in the cooler. I would pack things like a sandwich on whole wheat bread, fruits and veggies, and snacks. I always made sure he had a stack of paper plates & napkins near by!

@Boogs: i've never done lasagna roll ups, but i keep looking at my pin for them thinking that i should! i'm lazy & use those noodles you don't have to boil ahead of time when i make lasagna, but i will totally boil noodles for her :)

@mrs. bird: What about something like enchiladas or lasagna roll ups? They freeze well.

@BakerBee: well, i have the best mama ever (i may be biased though), so i have to keep her in tip top shape so she can continue to take care of me as long as possible ;)

@Seattlemom: very good points & not at all TMI, in fact, you may enjoy the doll she brought me after my surgery.... along with LOTS of fruit and other stuff, she was trying to encourage me to poop :D she's a nurse, so she'll know what to expect.

@MaryM: good idea, i was thinking of making some sandwiches for her, but pinwheels are a great idea! i make them with spinach, roast beef, and alouette cheese & i don't think that would get soggy the way a lot of other sandwiches would.

@skipper2010: thanks! i was thinking of getting her this to warm things in & then she can snap the lid on. also, i often have a long break midday & would be able to come by & have lunch with her. http://www.amazon.com/Sistema-656-ml-Soup-Mug/dp/B005D6Y1OM/ref=pd_sim_k_4?ie=UTF8&refRID=027S8G68CYAFCZ12E8HD

I was going to second @Seattlemom:

How about an overnight french toast casserole. maybe some premade sandwiches or pinwheels (make a wrap and slice them)

Breakfast burritos are my current go-to food to bring people! Also sorry if this is tmi, but most people get constipated after surgery so stay away from white bread/carbs, cheese, potato, bananas etc. Stick with lots of high fiber food and fruits and veggies. Hope your mom recovers quickly!

My mom is having surgery next wk & won't be able to get meals together so I need to start getting some freezer and crockpot meals together as well as things she can get herself during the day. Things like cereal won't work because she'll be on crutches and won't be able to transport it to sit & eat :/ so things she can put in a backpack to move or things my dad can put in the crockpot before work or some days I can come by & put it in the oven or bring her lunch. But it'll be a few wks to a month before she can weight bear at all & she refuses a wheelchair, so I'm thinking there are a lot if meals to come up with.

I'm thinking:

Quiche
Baked ziti
Muffins
Corn & potato chowder
Crockpot whole chicken
Then I can put a thing of packaged things like granola bars, fig newtons, nuts, out where she can reach them & I got a big water bottle with so she won't spill & doesn't have to refill a cup often.

More ideas? My brain is just not coming up with much at the moment.
