<description>&#60;p&#62;I think using the grill is a great idea - it makes DH have something to do with the other guys once they arrive. I would pair the meat (marinated steak as well as chicken or fish) with a salad, corn on the cob and a baked potato (all of which are easy).

You could google recipes, I think one that I did was just to put the lamb in the oven smothered in some cranberry chutney and it was so good and so easy (a little pricey though)... but makes a good impression.

<description>&#60;p&#62;You could do &#34;surf and turf&#34; so people can choose scallops or something like steaks. For dinner parties in the summer we like to do grilled steaks and grilled fish of some kind. &#60;/p&#62;
&#60;p&#62;Grill steaks and veggies (asparagus, sweet peppers, squash are our go-to veggies on the grill)&#60;/p&#62;
&#60;p&#62;Cold pesto pasta salad&#60;/p&#62;
&#60;p&#62;&#34;Fancy&#34; salad: baby kale, arugula, some combo of toppings: avocado, dried cranberries, orange segments, goat cheese, etc. Or, spinach salad with strawberries and almonds.

<description>&#60;p&#62;@78h2o: what about fish? Pan seared or poached salmon with roasted zuchinni/squash and a risotto?&#60;/p&#62;
&#60;p&#62;or if DH can do grilled veggies you can do a lime cilantro roasted sweet potatoes in the oven. SUPER easy and delicious.&#60;/p&#62;
&#60;p&#62;Or if a meat a pork loin is relatively cheap and roasted can be super delicious. You can do all the prep before and throw in vegetables to roast with it.

<description>&#60;p&#62;What are your go-to dinner party dishes?&#60;/p&#62;
&#60;p&#62;We're having our foodie friends over for dinner on Saturday and I'm doing the cooking... they love to cook and usually have us over, but we want to return the favor. Also, if they come to our house, we can hang out after we put LO to bed.&#60;/p&#62;
&#60;p&#62;I need ideas for something delicious, relatively healthy (and low carb, this couple doesn't eat a lot of carbs), and somewhat easy or able to be prepared in advance. LO will still be awake when they first come over and I'm getting the food ready, so I won't have my full attention on cooking!&#60;/p&#62;
&#60;p&#62;ETA: One idea I had was to make scallops, so if you have any scallop recipes you recommend, that would be great... however, if a second couple comes over, the wife doesn't eat seafood, so I need other ideas in case they're able to come.
