<description>&#60;p&#62;Tonight I'm making Sweet Potato and Black Bean Enchiladas.&#60;br /&#62;
2 roasted sweet potatoes, 1 can of tomato sauce, 1 cup of sour cream, garlic (I usually put in a spoonful or so) and some sort of spice (I put in chili garlic sauce or crushed red pepper). Whirl in blender until smooth. &#60;/p&#62;
&#60;p&#62;Saute a bit of onion and garlic in a little bit of oil, add in spice (chili garlic sauce or crushed red pepper, to taste), (I also throw in a can of diced green chili peppers from the International food aisle). Throw in a can of rinsed black beans and saute for a minute or two. &#60;/p&#62;
&#60;p&#62;To assemble: spread a layer of the sauce in the bottom of a baking pan. Soften corn tortillas (I like the fry in a bit of oil and stack method), add a smear of the sauce + a sprinkle of cheese (I use Mexican blend) + 2-3 spoonfuls of the black bean mixture, roll and put in pan. In between layers of enchiladas spread sauce, then cheese. Bake...eh, 20-30 minutes at 350, or until heated through/cheese melts. &#60;/p&#62;
&#60;p&#62;I usually make these vegetarian but have made them with shredded chicken before. Same as above but I mix a bit of the sauce in with the chicken and use less of the black bean mix. &#60;/p&#62;
&#60;p&#62;It's a bit messy and can be time-consuming, but are so good. I also tend to make too much sauce/bean mix, but they both freeze and reheat well so I pull them out and defrost when I want to make it again.

10 chicken drumsticks&#60;br /&#62;
4 tb butter&#60;br /&#62;
2 tb spicy brown mustard&#60;br /&#62;
1tsp garlic powder&#60;br /&#62;
1/8 tsp Pepper&#60;/p&#62;
&#60;p&#62;Preheat oven to 425&#60;br /&#62;
Put chicken on baking sheet&#60;br /&#62;
Melt butter in small bowl&#60;br /&#62;
Add garlic powder, mustard, and pepper to melted butter. Mix well.&#60;br /&#62;
Brush mixture on chicken&#60;br /&#62;
Bake for 40-45 min
