Then add in a can or a carton of chicken stock and bring it to a boil. Then reduce the heat and let it simmer until the chicken stock is absorbed. I add freshly grated Parmesan at the end

<description>&#60;p&#62;Monday: rice bowls with roasted marinated mushrooms, daikon/carrot salad, and baked tofu (the mushrooms and carrot salad are leftovers from today’s veggie bahn mi’s, so all I’m doing is baking tofu). &#60;/p&#62;
&#60;p&#62;Tuesday: veggie stir fry with leftover tofu, bitter melon, cabbage, eggplant. I may nix this one in favor of a Caesar salad wrap. &#60;/p&#62;
&#60;p&#62;Wednesday: garbanzo “tuna” salad wraps with extra pickles.&#60;/p&#62;
&#60;p&#62;Thursday: curried eggplant wraps. &#60;/p&#62;
&#60;p&#62;Friday: whole roasted cauliflower and charred cabbage. I’m not sure what I’ll pair this with yet. Right now I’m craving noodles with chunjang (fermented black bean paste), but that gives DH heartburn so idk.

Mon: chicken &#38;amp; rice w/grilled zucchini&#60;br /&#62;
Tues: chicken tacos, beans, and salad&#60;br /&#62;
Wed: leftovers&#60;br /&#62;
Thur: pesto pasta, broccoli, &#38;amp; meatballs&#60;br /&#62;
Fri: order out (pizza)&#60;br /&#62;
Sat: leftovers&#60;/p&#62;
&#60;p&#62;We usually end up with just 1 or 2 meat options throughout the week because we’ll Instant Pot a whole chicken/beef roast or grill a large batch of meat on Sunday.

<description>&#60;p&#62;@gingerbebe:  if I actually cut up a bunch of veggies (bell peppers, cucumbers, rainbow carrots) andnput out a plate with dip while I’m making dinner, my 2 year old will eat like half the plate. It’s crazy. I mean it helps that she loves ranch dressing but i bought the bolthouse yogurt based one so I think it’s ok and she really eats so many veggies that way. And then yeah I don’t feel bad if she only eats the meat during dinner. The 4 year old is hit or miss with all of it.

<description>&#60;p&#62;For the kids, my new jam is filling a chip and dip platter (mine has a lid) with fresh fruit and veg every day and throwing it on the table at dinner or weekend snacks.  I usually also pack their lunches using the same stuff.  Baby carrots, cucumbers, steamed broccoli, fruit, string cheese, salami, etc.  Then the pressure is off me to make a “balanced meal” and I can make a simple entree.&#60;/p&#62;
&#60;p&#62;Each weekend I usually cook a pot of rice, boil some eggs, cook a pack of bacon, and cook a big piece of meat and then use that all week.  Today I cooked a chuck roast in my Instant Pot, thawed a package of sausage links, and have leftover rotisserie chicken to use up.&#60;/p&#62;
&#60;p&#62;It’s warm out now so this week we have:&#60;/p&#62;
&#60;p&#62;Fajita bar (hosting Bible study tonight)&#60;br /&#62;
Japanese curry with chicken over rice&#60;br /&#62;
Entree salads (usually a Cobb) to use up remaining chicken, bacon, and eggs.&#60;br /&#62;
Italian drip beef sandwiches on rolls&#60;br /&#62;
Fried rice with odds and ends&#60;br /&#62;
Leftovers 1-2 times

<description>&#60;p&#62;I’ve been really trying to be better about meal planning. The week seems easier when I have a good plan but it’s so hard to get in the groove. &#60;/p&#62;
&#60;p&#62;I’ve decided not to try and be very inventive, and to keep it simple with mainly a few meals that are liked by all, with just a couple of new ones thrown in. So pretty much every week includes:&#60;br /&#62;
Tortellini with chicken sausage (or frozen meatballs)&#60;br /&#62;
Macaroni and cheese (homemade or Annie’s- my kids prefer Annie’s of course) and frozen broccoli&#60;br /&#62;
Make your own pizza Friday’s&#60;br /&#62;
Chicken cutlets (homemade, baked in the oven) or chicken tenders with something like sweet potatoes or frozen veggies&#60;/p&#62;
&#60;p&#62;We also do:&#60;br /&#62;
Turkey burgers (frozen) made on the stove top&#60;br /&#62;
Then usually something in the slow cooker- salsa chicken for tacos or taco rice bowls, or honey sesame chicken with soba noodles and frozen Asian veggie mix— the kids are pretty hit or miss with this one.&#60;br /&#62;
Roasted chicken sausage with roasted veggies
