&#60;p&#62;- Shepherd's pie made with tater tots, salad, and chocolate pudding pie (Pi Day).&#60;/p&#62;
&#60;p&#62;- Leftover shepherd's pie, salad, and pie.&#60;/p&#62;
&#60;p&#62;- BBQ pulled pork sandwiches, carrot slaw, and red grapes.&#60;/p&#62;
&#60;p&#62;- Corned beef and veggies.  Salad.  Soda bread.&#60;/p&#62;
&#60;p&#62;- Bangers and mash.  Peas.  &#60;/p&#62;
&#60;p&#62;- Going out for our anniversary one night, and eating random stuff at home one night that I'm solo parenting while DH is out of town.

Sa: Crock pot corned beef and cabbage (I know I should have made this today but I already had the picadillo prepped).&#60;br /&#62;

<description>&#60;p&#62;@DenverMom:  For Japanese curry, I just use the S&#38;amp;B Golden Curry sauce base from the store.  Its comes in a block, like chocolate.  You can usually find it in the Asian food section of large grocery stores.  Our family usually eats mild or medium spice for our son.  Its super easy to make - you just dice up an onion, some carrots, a big potato, and cube up some meat.  I usually buy a small package of thin sliced pork chops and chop that up.  I brown the meat first, then add the veggies, pour enough water to cover and then once the veggies are almost cooked through, I throw in the curry sauce mix and stir until the blocks have dissolved into the water and the curry has thickened up.  It probably takes 20-25 minutes, tops.&#60;/p&#62;

&#60;p&#62;My Ma Po Tofu, isn't super &#34;genuine&#34; per se, but its easy!  I brown 1/4-1/2lb of ground pork with 1 tablespoon each minced garlic and ginger.  Then I add 1 cup of broth, 1 tablespoon of soy sauce, 1 tablespoon of black bean garlic sauce, and let it come up to a simmer.  I mix up 1 teaspoon of cornstarch with 3 tablespoons cold water, add it to the pan and stir until the sauce comes back up to a boil and thickens.  At this point I add in 1 container of firm tofu cubed and 1/2 cup of frozen peas.  I gently stir everything together and let it simmer for 5 minutes and taste to adjust the seasonings.  It may need a little more soy or black bean paste or salt.  I add a big handful of chopped scallions right at the end and stir it in gently.  This is the mild version that I would feed my son.  I generally remove a portion for him, and then afterwards plop in chili garlic sauce (sambal olek) until its as spicy as we like it.  For us, its probably a tablespoon.  If you want it spicy to begin with, you can add the chili paste earlier, fry the pork and garlic and ginger with dried cracked chili flakes at the beginning.

<description>&#60;p&#62;Tonight, I roasted a whole chicken and plan to shred and freeze what we didn't eat. Sides were rice and Brussels sprouts.&#60;/p&#62;
&#60;p&#62;Monday: salmon, roasted parsnips and carrots, and some other side, maybe couscous.&#60;/p&#62;
&#60;p&#62;Tuesday: spaghetti bolognese, salad.&#60;/p&#62;
&#60;p&#62;Wednesday: honey Dijon skillet chicken, crockpot Greek potatoes, and some sort of veg, maybe sautéed shredded red cabbage.&#60;/p&#62;
&#60;p&#62;Thursday: black bean and butternut squash enchilada casserole.&#60;/p&#62;
&#60;p&#62;Friday: pizza night! Plain with kalamata olives for DD and sun-dried tomato, artichoke, and olive for me and DH.&#60;/p&#62;
&#60;p&#62;I haven't gotten as far as next weekend yet.
