Tonight we're having lemon pepper chicken and orzo (or butter-cracker crumb chicken, I haven't decided yet....). Two nights ago I made spinach herb meatballs and potato wedges, and last night I threw the leftover meatballs in a brown gravy with mushrooms and served it on top of creamy grits (I was going to make mashed potatoes but D was home sick and was craving grits.)

This week I also have Mujaddara (basically lentils and rice with caramelized onions) and pumpkin mac and cheese (used canned pumpkin).

For snacks we mostly just do fresh fruit, crackers, apples and peanut butter, goldfish, cheese sticks, and applesauce pouches.

I like ^ that meal for a quick sausage dinner. You can fry a couple eggs and throw them on top, too.

This week, we're having:
Mon: italian sandwiches+cauliflower cheddar soup
Tues: baked pork tonkatsu and salad
Wedn: TBD/class night
Thursday: crockpot buffalo chicken sandwiches and potato wedges
Friday: Out
Sat: Steak and shrimp kabobs.

This chicken recipe was awesome last week: http://www.rachaelrayshow.com/recipe/17837_Baked_Devil_Chicken/

What kind of meat do you have to use up? We like BBQ chicken in the crockpot: http://www.familyfreshmeals.com/2014/06/best-crockpot-bbq-chicken.html

Tonight I'm making Potato Soup with red skinned potatoes--not peeling them! I think it's a Ruby Tuesday knock off recipe.

Homemade sloppy joes and also ground beef stroganoff are both easy and use staples!

I'm not going shopping until this weekend or maybe even Monday because I want to clear out most of what we have. I have meat in the freezer and some staples so I would like to get creative with what I've got and then get some fresh ideas for my next grocery trip.

What's on your meal plan for the week? What about for snacks?
