Some tasty ideas on this thread!

We're starting week 2 after our last grocery delivery a week ago, and on the menu this week for dinners is:
M - Lasagna (frozen, was in the freezer before this all started)
T - Carnitas (shredded pork freezer stash, onions, verde salsa, corn tortillas) with refried beans and salsa rice
W - Chicken, broccoli, rice bake
R - Stromboli (making dough, pepperoni/cheese/mushroom filling from the freezer)
F - Chicken satay with sesame broccoli (bulk grilled some frozen chicken yesterday and using the other half of the broccoli from the chicken rice bake)
S - Chicken Marsala (sauce packet, frozen chicken and mushrooms) hopefully fresh green beans if they're in stock for the grocery delivery this weekend
S - Louisiana BBQ shrimp with crusty bread (going to try to bake the loaf!) https://food52.com/recipes/82565-louisiana-bbq-shrimp

@erinbaderin: That's really smart! It's been harder to meal plan because we do grocery delivery and they are out of the most random stuff, so we often get incomplete ingredients for a dinner.

@codeitall: could you share the recipes for the muffins with veggies? We're big on banana bread muffins here, but I'd like to try some veggie ones, too.

This has been our running menu with 5 and 3 year old kids:
Little pizzas on naan or english muffins
Tortelllini/ravioli for those rough nights
Lentil/chickpea/veggie pasta with meatballs
Korean beef bowls (https://damndelicious.net/2013/07/07/korean-beef-bowl/)
We've made lots of mini-muffins with healthy veggies snuck in for my kids to snack on
Mini-bagels with cream cheese pair well with fruit/veggies
Pad Thai (I cheat and either get the prepackaged mix or at least the sauce in a jar)
Stir Fry
Fried Rice
Cold pasta salad with rotini, bell peppers and mini pepperoni slices
Sheet pan kielbasa and potatoes and carrots
Chicken Fajitas
Chicken Enchiladas
French toast
Waffles
Applesauce pancakes
Frittatas with random veggies and diced ham
Poptarts for the really rough nights
Granola to pair with yogurt and fruit (try to get some with additional sources of protein like peanut butter, seeds or ancient grains)
Sloppy Joes (sometimes made with lentils instead of meat)
Zatarain's boxed rice mixes with kielbasa
Ground turkey taco chili (https://www.chelseasmessyapron.com/taco-chili-instant-pot-crockpot/)
Lazy lasagna chili (https://www.pamperedchef.com/recipe/Main+Dishes/30+Minutes+or+Less/Lazy+Lasagna+Chili/41075)
Corn dogs for kids and chicken patties for adults
J-Dawgs (https://ohsweetbasil.com/saucy-dog/)

Since my kids aren't eating at daycare with the peer pressure and planned menus, I've been throwing spinach, kale, pumpkin puree, applesauce, etc. in everything I can. We've been trying to cut back on processed meats, but for two week shopping stints we've been getting some things like kielbasa, diced ham, deli meat and sausage that we can pull out of the fridge on week 2. I'd also highly recommend tofu for this, but since my dairy free kid drinks soy milk, we don't use it as often as I'd like.

Honestly, I gave up and got HelloFresh. I don’t know what it is - usually I meal plan no problem but since this happened I just can’t do it.

I’m making this tomorrow! The avocado-tomato salsa part is so good. http://www.myrecipes.com/recipe/grilled-rosemary-chicken

I also made this last week - it has 1/3c sour cream in the recipe (not super creamy but some) - if you choose salsa you love it’s so good. I always use the target archer farms roasted tomato one. https://www.budgetbytes.com/creamy-salsa-chicken-skillet/ Great leftovers also

I also made meatloaf this week, I keep it super simple and the kids love it. 1lb ground sirloin, 1 egg, enough stuffing mix (flavored breadcrumbs) to come together. I don’t make a sauce on top because my kids love plain ketchup. I also made roasted rosemary potatoes, another simple one we love.

I’ve also been making this super easy homemade no-knead bread and we eat it with olive oil and balsamic vinegar, fresh mozzarella, tomatoes and some pesto I made a big batch of and froze. My dairy free kid and the one who doesn’t like fresh mozzarella also had pasta. Super easy and summery!

We've been having veggie wraps often: mayo, carrots, peppers, mushrooms, cheese in a mini wrap.

My best hack lately though has been to hand the kids their cookbook and have them each choose something to make. Most of the recipes are easy and I don't have to think about what I want to eat.

Looking for some new meal ideas over here. I’m going shopping today or tomorrow, and try to get everything I need to last us two weeks. We usually eat fish once a week, and we make chicken tacos and homemade pizza a couple of times a month. I’m guessing we’ll also do some grilling. Any good grill recipes using chicken? I’m always afraid to grill it.

Things that are super creamy or cheesy we can’t do.

I’m feeling uninspired and need inspiration. Last week DH made a chicken, squash, and rice curry which was a hit, but otherwise we haven’t tried anything new in awhile. Help!
