<description>&#60;p&#62;@ldh112: @Tanjowen: Ooh, that one looks good – my version I just actually made up on the fly during a “what do we have in the house and what can we make with it?” type of night, but it’s so good we eat it almost weekly now. &#60;/p&#62;
&#60;p&#62;Start with shredded sweet potatoes (2 is plenty) and you can shred them on a manual grater or use a food processor. &#60;/p&#62;
&#60;p&#62;Sautee up whatever veggies you have on hand in a little olive oil with some Italian herbs (again though, you could sub out different herbs for different flavors) – I most often do onions and mushrooms, although shredded cabbage or Brussels sprouts are awesome too!&#60;/p&#62;
&#60;p&#62;Fry up the potatoes like hash browns in a little olive oil and at the end fold back in the sautéed veggies, heat up the black beans and then layer in a bowl: black beans, hash potatoes and veggies and top with a soft fried egg. Takes like 20 minutes total to cook – less if you have things prepped ahead of time!

I just make mashed potatoes like normal, but with sweet potatoes, and at the end stir in 4-6oz of crumbled blue cheese, sometimes more, sometimes less, depends on how strongly I want to taste the cheese ( I'm lazy and just get the little tubs of crumbles). I also like to put the crumbles on baked sweet potatoes...I just think the flavors go together so nicely!
