<description>&#60;p&#62;We have some leftovers from the weekend. But on top of that here is what I’m cooking this week:&#60;/p&#62;
&#60;p&#62;-Thai red curry with shrimp, sweet potatoes, carrots, and broccoli (to eat with rice)&#60;br /&#62;
-beans (to eat with rice, sauerkraut, and cheese)&#60;br /&#62;
-granola (not really a meal but my kids eat it with yogurt as an easy meal)&#60;br /&#62;
-korean seaweed soup&#60;br /&#62;
-korean beef radish soup&#60;/p&#62;
&#60;p&#62;We might be good with that but if needed I’ll pull out frozen meals- lasagna from Costco, chicken fried rice from Trader Joe’s.

<description>&#60;p&#62;I’m having a real hard time with meal planning - I think it’s a combination of just being tired, and the grocery situation - I order pick-up for Friday but I have to have my order finalized by Tuesday, and then there are always a bunch of substitutions....I’ve been ordering ingredients and not meals and then scrambling to make meals. So this week I’ve got some kind of stir fry (because I need to use mushrooms, broccoli, and fresh chow mein noodles), chicken burgers (ground chicken, have to finish the buns) with roasted cauliflower (whyyyy did I buy a cauliflower in late May it’s a fall vegetable!) and chicken fajitas.

<description>&#60;p&#62;Yesterday I made Martha Stewart's mac and cheese (via Smitten Kitchen). It's delicious and makes enough to freeze, but it dirties a bunch of big pots and pans, so that's annoying. <description>&#60;p&#62;This week is low effort for me. I'm tired! Plus I have two days of PTO at the end of the week (we're being asked to take some PTO now during the pandemic).&#60;/p&#62;
&#60;p&#62;M-Chicken with sun dried tomatoes, goat cheese, and parmesan spaghetti. R- Cheeseburger Fried Rice (with gr. turkey) DH has asked for this for months. Chef John’s baked rice and beans served with diced tomato and cilantro and lime.&#60;br /&#62;
Lentil tacos. &#60;/p&#62;
&#60;p&#62;And we usually do one random leftovers night and one night where it’s a free for all (bean burritos, quesadillas, cereal, oatmeal, eggs, etc.).

<description>&#60;p&#62;I feel you on the food rut - nothing sounded good this week! I think part of it is that the weather is finally getting nicer. Most of my cold weather meals seem too heavy but my brain hasn't switched to warm weather meals fully. Anyway, this week we are having:&#60;/p&#62;
&#60;p&#62;Cheeseburgers with potato wedges and salad&#60;br /&#62;
Sweet potato and turkey skillet with roasted asparagus&#60;br /&#62;
Banana bread french toast with sausage and fruit&#60;br /&#62;
Crock pot cashew chicken over rice with broccoli&#60;br /&#62;
Budget bytes &#34;pizzadillas&#34;&#60;br /&#62;
Kielbasa, potato, pepper, onion hash&#60;br /&#62;
Grilled chicken and veggies &#60;/p&#62;
&#60;p&#62;For lunch I just made a big batch of honey mustard chicken salad that DH and I eat over baby spinach. (It's another great budget bytes recipe)
