@gingerbebe: Wow thanks for the tip on the rotisserie chicken! That is genius! I hate tearing it all up!

I usually just eat leftovers for lunch or salad. Nothing exciting. I need to be better about prepping on Sundays too.

@looch: Its in the prepared food case just next to the rotisserie chicken cart, like where they have the chicken soup and chicken salad and shrimp cocktail. Its like $12.99 for 2.5 pounds of meat! Its a TON of chicken!

@looch: Ours is really hit or miss with it (8/10 they dont have it). Its in the cooler section where they stock the chicken salad.

@Mrs D: I just do some basic versions. Cherry tomatoes and cucumber chunks at the bottom, then some baby carrots, chopped meat if we have it, some cheese and croutons, and then remained with lettuce. I've kept the dressing out because I toss my jar around. I can make them last from Sunday through Friday.

For summertime salads, Costco is my friend. I buy a pack of their vacuum sealed rotisserie chicken meat (its white meat, already skinned and pulled off the bone, and yummy), a bag of romaine or a tub of baby greens, a tub of grape tomatoes, a bag of the Persian cucumbers and make that my salad base. Then I go to Trader Joe's and buy extras to change it up, like shredded carrots, avocado, bacon, feta, bleu cheese, nuts, dried fruit. And I keep a bunch of different dressings around.

I pack the salads for DH and I in these big bowls:

http://amzn.com/B0009P67ZS

and just stack them up in our fridge. It takes up like an entire shelf on the fridge, but oh well. We just grab a salad and a bottle of dressing and put them in our lunch bags on the way out.

DH is usually more into sandwiches the rest of the year for lunch, whereas I tend to eat leftovers from dinner. So on Sundays, I make sandwich packs for DH. I get quart size ziploc bags, slip in 2 slices of whole grain bread, a leaf of washed lettuce rolled in a sheet of paper towel, and a sandwich size ziploc bag filled with his choice of cold cuts and pickle slices. I make 5 of those and then I make 5 ziploc bags of baby carrots with individual portions of hummus or celery sticks with individual portions of peanut butter. I stick all of those in a plastic basket that I keep in the fridge. In the mornings, DH grabs a sandwich pack, a bag of carrots, a piece of fruit and a granola bar and that's his lunch. He keeps a bottle of mustard in his bag.

Breakfasts we tend to do the same thing on a weekly basis. So if its oatmeal, I make a big pot of oatmeal with cinnamon and brown sugar already mixed in and portion them into tupperwares. Then I leave a tupperware of dried fruit and nuts on the table and each person can spoon some on when they're ready to eat. We usually alternate that with yogurt bowls, which just requires yogurt, some sliced banana, and a handful of storebought granola. If I know I need them on the go, then I will pre-portion the yogurt into tupperwares and keep baggies of granola and a bunch of bananas on the counter.

We do a lot of chicken salad for lunch. Bake or poach boneless, skinless breasts or thighs, let cool, toss in stand mixer to shred. Then add a combo of mayo/Greek yogurt/avocado until it's the consistency you like. We vary it by adding lots of chopped veggies and fruits and nuts. So one week might be carrots, bell pepper, green onion, apple. One week could be celery, grapes, almonds. One could be curry powder, raisins, pecans, carrots...we eat a scoop on a bed of greens or with crackers.

I only semi meal prep – I make big batch lunches every Sunday and try to prep some of our dinners for the week then too.

Our main lunch rotations are:

Ground turkey and bean chili (a couple variations)
Grain salads topped with grilled chicken
Soups/stew
In the summer I’ll do more cold salads for lunch and just prep the grilled meat and salad toppings.

@Mrs D: i need to suck it up and do the same.... I nurse my 6 month old to sleep around 7:30/8 and it makes me so sleepy I generally lose all motivation after that. BUT if I just do it it will definitely make my life easier during the week! I waste SO much time in the mornings making lunches for my 3.5 year old, and my lunch, and organizing bottles, and nursing, and making breakfast for everyone!

@hellobeeboston: I'm trying to do what I can on maternity leave (DD1 is in daycare and DD2 gives me a few long naps) to make it as easy as possible. I'm doing a few monthly meal plans...

I have just resigned myself to the fact that my Sunday nights are going to be late nights. DD1 goes to bed at 7pm, and DD2 seems to nurse around 715pm...so starting at 8pm I plan to prep my breakfast/lunch/snacks (hopefully I can get some cooking done during the day) and shower/do my hair. I'll probably be up until 11/12 - but it should make for an easier week.

@Mrs D: My overnight oats are similar! I'm also hooked and just started eating them a couple months ago - I do oats, almond milk, chia, PB2, cinnamon - then put strawberries & raspberries on top in the morning! YUUUMMMM.

I TRY to meal plan but I always run out of time on the weekends since we're always on the go, so I need to try to book an hour or two sunday to get organized!

@Mamaof2: I have been using ball glass jars a lot. I eat overnight oatmeal each morning - which is perfect in the 16oz jars. My snacks either come packaged (Graze) or I put in the smaller 4 or 8oz glass jars.

When I do salads or soups I can use glass jars also...but I need to start introducing more than salads and soups I think. Though it is so easy to prep for...

I eat the same stuff over and over

Sundays we grill a ton of chicken, fish, and make turkey chili

I use the containers below and make all 5 of my lunches on Sunday

The big section has fruits and veggies mixed
The other two have a carb and a protein - so chicken and rice or sweet potatoes and fish or chili and crackers

I also cut up celery, carrots, and peppers

And I make pasta and rice for the week.

Trying to start getting ready for when I return to work from maternity leave with DD2 - I am also trying to overhaul my eating habits...unfortunately the rest of my family will not be adopting my new habits.

Wondering for you meal prep super stars out there...do you have a routine to it? i.e. do you always make certain items or certain types of items each week? Or is it totally different each week?

I will need to meal prep for my breakfast, lunch and two snacks a day. Breakfasts I have covered...snacks I am ok with also - but I am trying to figure out how to keep lunches interesting!

I'll do some minimal dinner prep on Sunday...but in general my meals are either super easy, crockpot or one DH can help with/get started before I get home with the girls.
