I usually pack a string cheese with my snacks for the day and I have a bunch of tiny plastic containers for hummus, ranch or peanut butter to go with my cut up veggies.

One tip I learned recently was to immediately wash berries with a little diluted vinegar when you bring them home. It kills the mold spores (that are on all berries) and they last longer.

In addition to the suggestions above, I like having clementines on hand - delicious and easy to throw in a bag on your way out. For snacks, I love Skinnypop Popcorn. Trader Joe's has an air popped kind that is low in sodium too so it's super healthy but it gets stale quickly if you don't keep it completely packed in an airtight container. I've also read that using herbs to punch up flavor tricks your stomach into thinking it's eaten more so I've been getting the TJs Thai Chili Lime Almonds (they have similar level of sodium as their 50% reduced sodium regular almonds) and throwing in some TJs organic raisins (no added sugar - raisin is the only ingredient) to make an easy trail mix. Another favorite filling snack is a banana opened up (someone on HB posted about the "correct" way of doing this a long while back and it is so true!!) with some sunbutter or organic pb (only ingredient is peanuts and salt) spread inside and sealed back up. Can you tell I love talking about food? :)

PPs have already given great suggestions for fruits and veggies. I try to prep those in ziploc bags and also things like nuts or trail mix. For example if I buy a bag of almonds I measure out portions using a kitchen scale and put them in baggies in a basket in our pantry. This means when my husband (who often forgets to eat) is suddenly starving there is a healthy portion controlled snack available. ;)

Celery sticks, carrot sticks, and bell pepper sticks hold up well in the fridge. For the pepper I try to eat it with in 2-3 days before the edge become soft. Make sure they are very dry before you put them in the fridge; I store mine with a paper towel folder in the baggie. For dip I use hummus, but store bought hummus is fattening. You can make a healthier version with canned chickpeas.

Sliced apples with a little peanut butter or shaved parmesean cheese is really good. When trying to be healthy I will skip a topping for every other slice.

I love to make a big batch of soup and then store it in single servings in the freezer. When I don't feel like cooking I just pop a soup in the microwave. There's a really good beat & lentil soup on the HB blog.

This is exactly the kind of info I was looking for!

@blackbird: totally forgot about eggs- and I love 'em and get 'em for free from an organic farm (long, boring story). The easy access is probably what made me overlook them. Thanks for the reminder!

@Peasinapod: first I coat in olive oil then roast at pretty high temp actually. For broc and cauliflower for example I roast at 400degrees for 15 mins, stir, cook another 10-15min. They get a little crispy! Just sprinkle with salt and pepper and it delicious like that! Topped with a tahini sauce is even yummier!

I do baby carrots, celery, and stringless snap peas a lot. They're just the easiest and require the least prep for me. In the summer, i'll buy cherry tomatoes and lightly salt and pepper them. You can buy single servings of dip/hummus if you want something with them. I do this more in the winter when the produce isn't as tasty.

I also do a lot of hard boiled eggs. If you don't cook the crap out of them, they're perfect and creamy. I keep some salt at my desk, but I'd go without, too.

I like carrots, bell pepper, sugar snap peas and cucumber for veggie snacks. You can bring some hummus to dip in. I actually love roasted veggies even more then raw so often do a big batch on the weekends. They hold up well as leftovers. my favs roasted are: broccoli, cauliflower, carrots, Brussels sprouts, asparagus.

I love sliced apple with almond butter as a snack too.

I love having cut up bell peppers in the fridge. I think they hold up pretty well. I think the biggest thing in terms of snacking healthy is that you have to like the things you have on hand. If you buy a bunch of veggies, even if they are all cut up and ready, but you don't actually like any of them, you probably won't eat them. I like to roast tomatoes and put a little balsamic vinegar on them. It's weird, but I know I will actually choose to eat them instead of getting hungry and then eating garbage.

I prep veggies for the week for my husband and I, I find that carrots, bell peppers, cucumbers and grape tomatoes are a good mix (celery is too stringy for me). Sometimes I like to include lightly steamed string beans and zucchini in the summer time.

Whole fruit is awesome, I always have at least an apple and a banana in my food bag.

firm, tart apples hold up really well in the refrigerated after being sliced and bagged. grapes are also easy. and bananas--no prep work!

don't wash strawberries until you're about to eat them--when you wash and put them back in the refrigerator, they go bad very quickly. i think blueberries hold up better after washing and refrigerating.

I am starting some meal planning/ snack planning for financial and health reasons. I am starting with healthy snacks, because the fact that we frequently don't eat all day is a contributing factor in the over-eating/ fast food in the evenings.

I have a couple questions:

What are your favorite healthy snacks/ sides you can prep on the weekend for weekday noshing?

What veggies and fruits hold up the best/worst in the fridge if my intent is to slice, dice and baggie them up in single servings for the week?

TIA
