Thanks everyone! I looked at the rest of the meals for the week and it was pretty Italian and roasted chicken heavy, so I think I’m going to to tacos similar to what @gingerbebe posted.

I usually do breaded chicken cutlets, grilled or baked (good hot or cold); 2 heads of washed and cut lettuce and a jar of homemade dressing; pioneer woman crash potatoes (easy to reheat). Also add cut up berries and some sort of bar cookie dessert. Somewhat healthy and you can have leftovers for lunch as a salad or on sandwiches.

If you don't wanna outsource the entire meal, another easy one is taco bar.

Just cook some taco meat (I like making ground beef or Instant Pot salsa chicken to which I add a bag of those Birdseye Southwest blends - it has corn, black beans, onions, and peppers in it), and send it with a bag of chips, a bag of tortillas, a bag of shredded cheese, a bag of shredded iceberg, a tub of guac, and a jar of salsa. And maybe a six pack of Corona!

similar to @Tanjowen: my favorite meal was a roasted chicken. My friend had a huge pan and the chicken was in the middle surrounded by veggies and potatoes - all seasoned and ready to go - she came to my house and popped it in the oven for me - when DH got home dinner was piping hot and ready - it was delicious!!!

Cookies are always a hit too =)

We've been doing meal trains for my local group of girlfriends for the past year and a half now. A lot of them don't work full time, I do. So I tend to go easy with what I make - something easy, that reheats well (especially for leftovers). I've done mac and cheese with pulled chicken, spaghetti and meat sauce with fresh bread (for the dairy-free friend), lasagna... Other easy options: taco night, chili. I know some people sign up and bring snacks or breakfast options too. We also ask the mom which she prefers since some have hubby's that cook so if daytime is harder, then breakfast/lunch it is!

@Kitkat: One of my favorite new mom meals someone brought me and I bring to new mom's at times is the meal deal from Publix: A whole roasted chicken, green beans, mashed potatoes and rolls. I throw in a mixed salad, cookies, and muffins and cut up fruit for breakfast and done.

When a friend of ours had a baby in the hospital they had meals delivered to them for months. When it was my turn I made a big, nice salad with fancy local greens, that kind of thing. Grilled some simply flavored chicken. Included some goat cheese, and some cheddar cheese, and a baguette.
She told me she really appreciated having a healthy meal after getting lots of cheese/carb based meals.

I'm planning some stuff to make my brother, and one of the things we are going to do is a mild curry with frozen rice from Trader Joes. Also some quality frozen pizza crusts and toppings.

The best thing someone did for me on our meal train was told me to text me my order at my favorite restaurant and they’d pick it up. I now do it for friends. Super easy!

I also have a simple lasagna recipe.

I like to bring a veggie quiche made with a TJ pie crust (trader Joe’s makes the yummiest pre made pie crust IMHO) with a fruit salad or green salad and brownies (easy from a box) or cookies. Quiche is nice because it’s easy to double or triple for company, too. Bonus is that quiche could totally be breakfast or lunch too!

I always try to focus on non-dinner meals for new moms. People bring giant casseroles and stuff and there's always leftovers from that, but no one brings like breakfast or snacks. I always like to make hard boiled eggs, cut fresh fruit, some dry sandwiches like meat and cheese on whole grain bread, and muffins.

If you do actually need to bring a dinner, I'd try to bring something that can be lunch too. Maybe some chicken salad and croissants, plus a fruit salad. (All of those things can be purchased at Costco).

I never bring drinks, but I generally always bring paper plates and plastic utensils and napkins mostly because I feel like new moms need permission to use disposables and I've had every single new mom thank me for bringing paper plates because she felt like she "had" to use them when she secretly wanted to use them all along.

I would totally buy a fancier frozen pasta/lasagne from a nice deli/grocery store with salad, bread and cookies or brownies from the store bakery. You could also make a pasta bake yourself with shredded chicken or ground beef, pasta, container of ricotta mixed with jarred sauce in a casserole dish topped with shredded cheese.
Or a rotisserie chicken and mashed potatoes, even a pulled pork in your crock pot that you pre shred and bring buns and premade slaw. I know I would literally take and scarf anything I didn’t make myself even if it was purchased from a store and not home made. I would maybe stay away from pizza as they can easily order out for that and might be sick of it.

Tonight I’m making fajitas. I think it’s pretty simple for making ahead.

Tomorrow I’m making cabbage and sausages.

At this point in my life, I only make easy stuff. :silly:

How about grilled chicken & veggies with baked potatos? The mom can use the left overs for lunches later in the week? Maybe some cookies or box brownies? I dont think drinks or desserts are necessary.

I also think store bought is a-okay. Its the thought that counts!

I signed up to bring dinner to a new mom on Wednesday and I’m stumped on what to bring. I have enough trouble coming for dinner ideas for us :silly: . The only preferences specified are no Chinese or Indian food. It also needs to be easy because I’m 29 weeks pregnant and will have company all week...so I have no energy. Also, is it expected to bring drinks/dessert too? Is it too lazy to do a take & bake pizza and salad?
