I usually make pizza or calzones once a week. I love it because you can use up whatever is in your house for toppings. I buy premade pizza dough at the grocery store bakery.

I usually have meatballs leftover in my freezer from pasta night, you can use leftover chicken (bbq chicken pizza is yummy!), spinach,. tomatoes, onions, mushrooms, etc.

It just takes a couple of minutes to roll out the dough and pile the toppings on, and 15-20 minutes to bake.

You could also try to always have rice made and on hand in the fridge, then you could make fried rice w/veggies, egg, chicken in no time. Same with mexican dishes...rice is versatile and is great with meat for DH! Brown rice is pretty healthy for you.

What time does DH get home? I'd thaw things out/marinate them ahead of time, and either just throw stuff in the oven to cook and pull together a salad, or hand him the baby so dinner can be made. If you only do it like, twice a week, you should be able to get enough leftovers out of it.

Or cook up a lot of chicken at once and portion it out. One night for chicken tacos, another to serve with pasta. Just keep it as simple as possible.

I'm of the opinion that beggars can't be choosers. What you make, he eats :) Or he can make himself dinner, lol.

I have a 4 week old too and I've found the best thing for me is to make a dinner during his morning nap that can be reheated or only requires a tiny bit more prep at night. I'd never make dinner if I waited until evening. Some examples include soups or blts where I cook the bacon and slice the veggies in the morning then nuke the bacon at dinner time. Good luck!

Do you like stirfry? I like to marinate lots of chicken at once, chop it at once, and freeze 3/4 of it - and then do the same with veggies. Then I have dinner for that night, and a few more, and just add fresh quinoa or bulgur (havent tried freezing those). I consider it healthy.

My go to is quiche. It is like scrambled egg pie. And it is easy to double so you can freeze one. Other wise a noodle, sauce and chicken is super easy. I will get a routissere chicken and have that with a vegtable. With the left overs taken off the chicken I will make chicken noodle soup (I use a soup starter bag with noodles, seasoning and vegtables-you just add water). Having deli meat and french bread is nice to make some good subs.

I have lots of ideas but I'm probably being too picky...trying to avoid unhealthy stuff since I'm trying to lose the last 8 pounds of baby weight. Sounds like what we had in our freezer stash...chili, enchilada casserole, quesadilla casserole, spaghetti sauce, beef stew..we are boring too!

We are very boring when it comes to cooking, but what about chili or spaghetti? It's easy to make either of those with ground beef. I'm not above hamburger or chicken helper either, even though they're pretty processed. I like to make mexican-ish casseroles with whatever kind of meat and veggies are on hand (corn, peppers, onions, etc); just add black beans, enchilada sauce, tortillas, layer the ingredients and sprinkle cheese on top. Voila!

So, we're down to our last 2 freezer meals. I'm trying to menu plan for DH and I the next week or so and it's so hard with a 1 month old trying to figure out what to cook because time just isn't in the equation.. Plus, I'm by myself a lot, so unless LO is happy in his bouncer or napping, my hands are tied.

I can do crock pot, but don't really want to every night. I'd be happy with PB J every night, but if it doesn't have meat in it, DH won't eat it. I've looked on pinterest, but it's almost overwhelming. Ideas?
