A friend of mine took loaves of whole wheat bread from Costco (the two pack) and made a ton of crustless pb&j to freeze before her third came along! It was mostly so she could throw them in her diaper bag and they would defrost while she was out with all three of them.

Don't over work yourself with freezing meals though! I spent SO much time prepping before E came but looking back, I should have rested. The meals in the freezer wouldn't have made a huge difference :) and I actually feel like I could prep more meals while wearing my newborn than being very pregnant and tired!

You can also use beans as a base for your pancakes :) Then you can sneak in some veggies too but in delicious blueberry pancake form.

@Running Elley: I made these today and they were really tasty and I think they'd freeze well!

I subbed celery and scallions for the peas and carrots and used avocado oil and DIY bisquick (halved, link below)

What about baked oatmeal cups? My cousin's toddler LOVED these. I had them on hand in my freezer and when he was at our house and requested a snack I pulled one out for him - easy peasy. I used little apple chunks in them and honey to keep them healthy.

http://heavenlyhomemakers.com/baked-oatmeal-cups-birds-nests

That site actually has lots of great recipes -- everything I've tried on it I've loved. :)

@Bao: I used this recipe as a base. I used all whole wheat flour (no white) and I omitted the sugar (the applesauce sweetened it enough for E to love it). I freeze them and then just set out to defrost. We use them as snacks a lot of the time! http://www.allthingsgd.com/2011/10/veggie-muffins/

Pasta freezes and defrosts really well. We have mac & cheese and spaghetti portions in our freezer and they're so quick and easy to prepare and serve. I always have bread in the freezer. My DD loves mini grilled cheese bites and these are SUPER easy to make. And we have an assortment of frozen veggies and fruits too.

LO #2 will be here sometime in the next month and I'm looking to prep some things that I can freeze to make sure that my 13 month old will actually be eating food of substance while we're busy with the baby.

So I need suggestions! I'm planning on making some toddler veggie muffins that he's liked before and freezing them. I'll probably make and freeze a batch of pancakes too but I need more ideas.
