@Mrs. Blue: @matador84: I love this idea!! I tend to roast our veggies on a sheet pan anyway, so it makes much more sense to do the meat at the same time :silly: Off to go search for more recipes.

I'm currently obsessed with sheet pan dinners, mostly because it means I only have one to clean up. You can do it with pretty much any meat and veggie. I know you said no starches, so this won't work exactly but you could just sub in another veggie. We do sliced up sausage (we get either chicken apple sausage or italian sausage), green beans, and potatoes (again, sub in whatever) with italian seasonings and and olive oil. It's so good and our kids always eat it the green beans and sausage (they don't like potatoes).

I like spaghetti squash boats. Either a lasagna style, or an alfredo ( shred some chicken, dump in a container of alfredo, add in some steamed brocolli and then bake it with or without cheese on top ) or I also really like this buffalo chicken one
http://peasandcrayons.com/2016/02/cheesy-buffalo-chicken-spaghetti-squash-recipe.html
here's a lasagna one
http://www.thekitchn.com/recipe-lasagnastuffed-spaghetti-squash-recipes-from-the-kitchn-208523

Not the season, but we also enjoy salad rolls with a bbq chicken on the side
http://sallysbakingaddiction.com/2015/04/07/homemade-fresh-summer-rolls-with-easy-peanut-dipping-sauce/

We really like this burrito bowl and leftovers save really well
http://www.katrina-runs.com/whole-30-day-20-pass-the-cheese

This tex mex casserole is also yummy and the leftovers are really good too

@mediagirl: May I ask why are you cutting all carbs for your family? I wish I could just serve a protein and a veggie because that's what I eat, but I always have to make an extra carb for DS and DH! I always thought kids need, what, 8 servings of carbs a day to grow or something. Is there something I don't know? :P

Otherwise, everyday will be so easy for me if I can just make a protein and a veggie! Protein: Pork chops, roast chicken thighs, chicken wings, steak, salmon, roast shrimp with broccoli; veggies is any steamed veggie like green beans, broccoli; or roast asparagus. We do always do a salad though in that case. It will get easy if you get into a habit! I only buy those "triple-washed" salad boxes, and I add nuts, cheese, and apples to it and there's your salad!

PS: Another veggie idea - does your family eat zucchini spirals or sweet potato spirals noodles? They are basically pre-cut "noodles" from zucchini and other root veggies. That's what I eat when we do a noodle main dish for a meal. I just have to cook separate for myself when they eat regular noodles. My family won't eat them but yours might :)

We do a lot of meat plus veg here too. When I'm wishing for a carb but don't really want one we roast baby bella mushrooms with a dab of cheese in the middle and have that too. So like sauteed green beans and pork chops and mushrooms. Or roasted chicken thighs and cauliflower and mushrooms.

We often do just meat + veg here. Pork chops, carnitas chile verde, pot roast, roast chicken, chicken tikka masala, and salmon cakes are some of the common meats we do. We often do large pot meals and have leftover meat for a few days (the chile verde, etc.). For vegetables, I generally just do broccoli raab, broccoli, cauliflower, carrots, sautéed spinach, kale, or chard, some kind of salad, beets or sweet potatoes.

The salmon cake recipe I use is this one, if you want it:

A couple more ideas, spaghetti squash is nice with a meaty tomato sauce.
My mom makes lasagna using sliced zucchini instead of sheets of pasta. She omits the béchamel/ricotta component, but it would be equally good with it. I had it for lunch today, as a matter of fact and I didn't miss the pasta at all.
I also like sweet potatoes instead of regular white potatoes, is that an option, if you want to do a baked potato?
Also eggs, you can do a crustless quiche or frittata and that's very hearty.

Just jumping on @FaithFertility: 's idea - these lettuce wraps are a huge hit in my house. I quadruple it (crazy) and freeze half of the "filling" part for next time. It's kind of salty so I go a little easy on the hoisin and soy sauces and skip the sriracha because we're wimps :silly:

@mediagirl: Do you have a Trader Joe's nearby? They have a bagged salad that you dump into a bowl and add dressing and maybe tomatoes and avocados. I too have a hard time "remembering" (well, let's be honest, it's just laziness...) to wash the lettuce and rip it up for salads, so I think the bags are awesome. The only catch is that you pretty much have to use them within a day or maybe two. Day three bagged salad is sad salad. If you don't have TJ's, our regular supermarket has some decent options like that too. I wouldn't use the ones with premade salad dressing, but even excluding those, there are options in the lettuce case.

Anyhow, as to the question, I do a lot of lentils, beans, or eggs and salad or veg side.

@Mamaof2: @Mrs. Goose: we have a hard time with salad. I always have great intentions of doing salad and then forget we have it and then it's bad in like 2 days. Ugh.

I make a fake chicken breast and slice it on top of a spinach salad with sliced almonds, crumbled feta, grated carrots, and berries or grapes with balsamic glaze as a dressing. My toddler isn't old enough for salad yet, but hopefully she'll like it when she's older! It's quite filling so I just make it a huge plate for each of us for our dinner.
