You just put a Nilla wafer on the bottom of a cupcake liner and fill with lemony cheesecake batter. You can garnish with zest or a lemon/lime candy on top. She has a chocolate version too. My only tweak is I add way less of the milk mixture - I like a moist tres leches, but not a soggy one. I thought about cupcakes but not sold on the idea for some reason, even though they might be the easiest option. I need something that can be pre-made, is fairly easy to make, and be held easily by guests as they walk around. </p>
