<description>&#60;p&#62;Ooh, how about lemon/lime cheesecake cupcakes?  You just put a Nilla wafer on the bottom of a cupcake liner and fill with lemony cheesecake batter.  You can garnish with zest or a lemon/lime candy on top.  I know for sure they freeze beautifully - just thaw on the counter and they are ready to go.

<description>&#60;p&#62;This isn't handheld, but its SUPER easy and tasty.  She has a chocolate version too.  My only tweak is I add way less of the milk mixture - I like a moist tres leches, but not a soggy one.  Half the milk mixture was plenty for me.&#60;/p&#62;

Use any sort of fruit/cheese/dulce de leche filling, sprinkle with sugar, and bake. They would be nice with some sort of dipping sauce...dulce de leche, chocolate, etc.&#60;/p&#62;
&#60;p&#62;Option #3 would be to just go to a Mexican market/bakery and get an assortment of cookies (Mexican wedding cookies are always good!).

<description>&#60;p&#62;I worked at a cupcake shop and we had churro cupcakes (just cinnamon sugar basically) and margarita (lime, basically) and I think those would be fantastic! Even if the place doesn't do anything that fancy, or you  have to make them yourself,  I bet you can do vanilla cupcakes with lime icing or vanilla icing dipped in cinnamon sugar.
