<description>&#60;p&#62;This is almost embarrassingly simple, but sometimes when I want to bulk up our mexican dinners I make a side dish of canned, refried black beans mixed with either frozen or canned corn. I let everything heat together on the stove and sometimes add a little taco seasoning for some spice/flavor. If you can refried beans that already have seasoning in it, that works too!

<description>&#60;p&#62;I'm a big fan of elote. While it is best on the cob, frozen corn works just as well.  I skip the mayo and add butter along with chili powder, cayenne pepper, cotija cheese (parmesan will work in a pinch) and a squeeze of lime.  So tasty!
