<description>&#60;p&#62;@Revel:  I agree. I was actually going to suggest using an immersion blender on the canned coconut milk before putting it in the coffee. Because it does get thinned out and chunky sometimes. I think this recipe looks really interesting. I'd give it a try...but I'm happy to just drink it black.

<description>&#60;p&#62;I love coconut milk but I don't really like it in coffee. It always seems like it doesn't lighten the coffee up enough. I'm not doing a full MSPI but I limit dairy and I've just gotten used to drinking it black, but it's not the same.&#60;/p&#62;

<description>&#60;p&#62;I agree with coconut milk. So Delicious makes a coconut creamer but if you can't find that you can just as easily use a can of coconut milk, just make sure you mix it well first. What about chocolate hemp milk for a mocha? :)

&#60;p&#62;If you follow an mspi diet, have you found any creamer you can use in coffee? Our regular coffee mate is lactose free but still has milk protein (casein something or other). I'm experimenting with an mspi diet for two weeks to see if it helps my cranky baby. Using plain almond milk for now but it's not as good!
