<description>&#60;p&#62;You can easily halve the sugar in most recipes without if effecting consistency. I have replaced the fruit in a standard banana muffin recipe with veggies like carrot, zucchini, or pumpkin and all but eliminated the sugar (I used maybe 1/4 cup max where it called for 1).

&#60;p&#62;BABY Muffins&#60;br /&#62;
•	2 mashed ripe bananas&#60;br /&#62;
•	1 egg&#60;br /&#62;
•	2 cups whole wheat pastry flour&#60;br /&#62;
•	1 tsp baking soda&#60;br /&#62;
•	2 1/4 tsp baking powder&#60;br /&#62;
•	1/2 cup water&#60;br /&#62;
•	1/2 cup applesauce&#60;br /&#62;
•	1/2 tsp vanilla extract&#60;br /&#62;
•	1/2 tsp cinnamon&#60;br /&#62;
•	1/4 tsp nutmeg&#60;br /&#62;
•	1 cup of berries&#60;/p&#62;
&#60;p&#62;1) Preheat oven to 350&#60;br /&#62;
2) Combine dry ingredients&#60;br /&#62;
3) Combine wet ingredients in a separate bowl&#60;br /&#62;
4) Add wet ingredients to dry mixture and mix until combined. Then fold in berries.&#60;br /&#62;
6) Bake for 15 mins

<description>&#60;p&#62;I make these alll the time now.  Both DH and E love them and I use only one packet of truvia to sweeten them, but could probably leave it out altogether.  They're more oatmeal to go, than a true muffin, but they are healthy and delicious! &#60;/p&#62;

<description>&#60;p&#62;The easy pumpkin &#34;muffins&#34; probably have a bit less sugar than that, but still aren't great. I haven't made them for P, but I made them for myself.  Spice cake mix and a can of pureed pumpkin.  That's it.  The pumpkin would give it the veggies...But, I have NO CLUE how much sugar may be in the cake mix.

&#60;p&#62;FYI, I have a pancake mix that suggests replacing the butter and egg with applesauce or yogurt.  I sometimes just grate an apple into it if I don't have applesauce handy.  The pancakes come out pretty well.  It works pretty well with buckwheat or other &#34;multi-grain&#34; style mixes.

I found what I thought was a great recipe for muffins with applesauce in them this morning but after I bought a jug of applesauce at the store on my lunch break, I realized it has 2 cups (TWO CUPS) of sugar in the muffins. Uh, no.&#60;/p&#62;
&#60;p&#62;So, anyone have a good recipe for muffins? Preferably one that uses applesauce? :)
