<description>&#60;p&#62;Since it's summer, what about lighter dinners? Non-lettuce salads: kale, bok choy, napa cabbage, spinach and other non-lettuce greens. Mix in fresh fruits and light dressings, avocado, nuts, grilled meats, etc.&#60;/p&#62;
&#60;p&#62;Fresh fish tacos (grilled or broiled white fish, not fried) or shrimp tacos with avocado, cilantro, cabbage and onions. Use warmed corn tortillas instead of the premade fried shells for healthier, fresher type tacos. &#60;/p&#62;

&#60;p&#62;Premade mahi mahi burgers (we get ours at BJ's), and make (or buy) pineapple salsa to go on them. Salmon burgers - great grilled. Grill up some veggies for the side dish.

<description>&#60;p&#62;Crockpots are the way to go, in my opinion. Especially when you're a mom. My new favorite is making french dip sandwiches in the crockpot. I just googled a recipe online and used what I had in the house. If I didn't have something in the recipe, I didn't sweat it, it's just a marinade at that point.&#60;/p&#62;
&#60;p&#62;I also made tuna noodle casserole the other day. I forgot how easy and good that meal is!!

<description>&#60;p&#62;Last night we had quesadillas with shredded rotisserie chicken, pepperjack cheese, and thinly sliced peaches.  Dip in 1/2 c greek yogurt+1 tsp honey+ 1/4 tsp lime juice.  Really good and really easy.  I get most of my recipes these days from Cooking Light (this one included).&#60;/p&#62;

<description>&#60;p&#62;My go to lately is chicken breasts marinated in honey Dijon salad dressing, just cooked on the grill. Then I take whatever veggies we have in the fridge in a big ziplock w salt, pepper, olive oil and balsamic, and grill those too. Typical veggies include asparagus, zucchini, portobello mushrooms,mehole onions (skinned w top and bottom cut off) peppers. It's delicious!

<description>&#60;p&#62;My favorite is very easy.  Chicken tacos in the slow cooker. Put chicken in and put in some garlic and paprika, things that are always in my house anyway.  Cover with salsa and cook on low about 8 hours then shred.  You still have to buy all the taco fixings, but we usually just get the shells and some cheese.
