My mom made me a huge batch of yummy healthy muffins!! I also had cheese strings and yogurt in the house. Oh and my hubby sometimes made me lunch and left it in the fridge :)

Jimmy Dean Pancake on a Stick. My favorite when we worried that colic was a result of issues with milk.

@scg00387: @deerylou: I literally existed on peanut butter toast and apple slices for the first few (ahem, more than few) weeks of M's life. I was so overwhelmed with breastfeeding and baby care I could hardly think about eating anything else. Good for you for thinking ahead to make sure you have some good things to take care of yourself!

Muffins, trail mix, granola bars, yogurt, and lunch meat & cheese sandwiches with fruit and chips were my staples the first few weeks!

For breakfasts I ate a lot of oatmeal bakes, granola (low in sugar, actually my sister homemade mine with raw honey) with plain yogurt, and eggs with goat cheese.

For dinners I found it was easiest to just buy premarinated meat that took 5-10 mins to cook, and steamed some veggies. With two easy dishes like that, it make it quick and easy.

What about making a big pot of chili or something that you can freeze in portions? You can keep enough out for a few days, and defrost other bits as you see fit?
Green smoothies have also been getting me through my mat leave so far - love my Magic Bullet.

This oatmeal casserole is a great make-ahead meal. It's tasty and will help with your supply :). I make with steel cut oats instead of rolled oats.

This is my first week home on my own with LO, and I'm finding myself forgetting to keep fed and hydrated! Today, I realized that most of our pantry and fridge items take a while to prepare, so I'm taking a trip to the grocery store tonight to replenish.

I'm looking for good breakfast and lunch ideas that are quick and easy to grab and consume. I would also be into making large portions of a particular meal in advance, so I can eat it throughout the week, as well. I'd prefer meals that are relatively healthy, but caloric enough, as I'm breastfeeding (as much as I can muster, anyway), and have limited free time to sit down and eat.

Tell me what you ate and enjoyed those first few weeks! Thanks! :)

What did you eat a lot of those first few weeks?
