I know this is not a recipe, but do you have a Costco around? At our Costco, the prepared food section usually has a mac n' cheese you can take and bake and I don't know what they put in it, but it is DELICIOUS.

If you like a baked firmer mac n cheese, this one is good:

http://www.pauladeen.com/the-ladys-cheesy-mac

If you like a creamy version, this one is also good:

http://www.pauladeen.com/creamy-macaroni-and-cheese

I use this recipe: http://vegetarian.betterrecipes.com/ted-allens-amazing-macaroni-and-cheese.html and it's delicious. I usually add either a head of cauliflower cut into pieces or a bunch of peas, sometimes some diced ham.

@babycanuck: I just eyeball and throw ingredients together. But my kids looooove my cheesy pasta and DD asks for it everyday 😂
Cook 2 handfuls of elbows/fusilli/bite sized pasta
Add enough Heavy whipping cream to generously coat the pasta
2 slices of white American.
Mix til the cheese is melted.
I throw in frozen corn and peas sometimes too.

Oops. Realized this might not be for your kid!
I've made my easy mac and cheese for my inlaws and they loved too! :)

This is my recipe:

Pasta- boil 16 oz elbow noodles with salted water, drain pasta and retain 2/3 cup of pasta water, do not rinse pasta, add a stick of unsalted butter, 1-2 eggs, flavor with pepper and seasoning salt. Mix this to let butter & eggs coat pasta.

Cheese- use the still warm pasta pot and stove eye. Pour a half cup of Half & Half or heavy cream, stir in cheese- lots of cheese 24 to 32 oz. For a basic no fail mac & cheese I use monterey jack and cheddar. Sprinkle pepper and seasoning salt again on the creamy cheese mixture. I play it be ear to add more Half & Half/ heavy cream, but you definitely want to pour in some of the reserved starchy pasta water, at least 1/3 cup. Add the pasta & stir until all is coated and put in a baking dish.

Topping: shredded cheese and crumbled Ritz crackers or Panko crumbs.

Bake 325 for 40-45 minutes.

I cook the macaroni, leave a little water at the bottom (like a few tablespoons), then put grated cheese and a bit of salt on top and mix it while it's still hot. Turns out pretty good! Sometimes I'll throw some broccoli or peas in to cook with the noodles, then mash them up while mixing the cheese.

Oh, and they're boiled, not baked. I've no idea how to bake noodles and not have them get all dry.

@yoursilverlining: I can bake like a champ but a roux? I've never been able to get it right. The end result tastes floury or burnt, never cheesy enough...

What was the reason for the fail? (I mean, like was it too runny, not cheesy enough, etc.)

I feel like mine is pretty no-fail. Just make a butter/flour roux, add milk (have on medium, low-medium heat - don't boil milk or it will curdle and wont' thicken properly) and whisk to dissolve roux, add cheese, turn to low/simmer and whisk to dissolve cheese.

You can bake it after, or just toss in pasta and eat.

I find it really really hard to go wrong with any Ree Drummond/Pioneer Woman recipes:

http://thepioneerwoman.com/cooking/macaroni-cheese/

Eta: I recently made this for Memorial Day, and it really was delicious. You can serve it after you stir in the cheese sauce or add more cheese and bake it. Either way, it is really good.
