I would look for dark chocolate recipes vs fudge/milk chocolate. Dark chocolate is much less sweet and healthier. Other than that, no advice! I hate chocolate cake. lol

@swedishfish: haha I actually just posted a "I <3 U" to Sarah! I think I might use that for LO's birthday cake this year! Perfect coloring too for a Daniel Tiger cake. ;)

@lamariniere: thanks for the response!!! Decaf is a great idea! 1) My ILs don't drink coffee past a certain time because it will keep them up. 2) Cake will be after dinner which means within an hour of LO's bedtime. For someone that rarely gets sweets. Sugar + Coffee an hour before bedtime could prove disastrous.

@locavore_mama: I made that SK double chocolate cake very recently! It was AWESOME. I used half the sugar and the sweetness was totally fine. Why don't you want to use coffee? I used decaf and the cake just had the slightest hint, more like a note, of coffee.

Edit: I also just made a simple cream cheese frosting since I don't like buttercreams.

@locavore_mama: I have a depression cake recipe that is really good, I made it for a vegan friend. It actually tastes like Hostess cupcakes!

http://savorysweetlife.com/2010/01/chocolate-wacky-depression-cake-recipe/

For flourless chocolate cake, I like the one by America's Test Kitchen, but it uses Hershey's Special Dark. I am too chicken to substitute chocolates there, because I've read that they can wreck the chemistry of the cake.

@locavore_mama: What about a flourless chocolate cake? They're soooo rich that you can really only eat a tiny piece, and you don't have to fumble around with frosting.

@blackbird: LOL! I wouldn't be so sure about to that. ;) I've stopped baking really sweet desserts for him now for quite a few years. His health doesn't need it. His health is more important to me.

And I have to disagree with this notion that a good chocolate cake has to be a sugar punch in the face. I've had many amazing chocolate desserts that don't feel like they're rotting my teeth.

@T-Mom: @Mrs. Pen: thanks! Will check them out.

My favorite choco cake recipe is the "Black Magic" cake.. it is all over the internet. http://allrecipes.com/recipe/black-magic-cake/

It's not too sweet at all, but depends on the frosting you make.

I don't know if I have a good recommendation for frosting that would not be sweet. Maybe a cream cheese frosting?

@Mae: nah, if it wasn't for LO I would still be looking for a not so sweet cake recipe for him. They eat way too much junk and need to eat healthier. So the days of me baking him a double chocolate cake with chocolate ganache are long over.

What he would want is a double chocolate black forest cake with chocolate ganache filling and chocolate buttercream frosting. Will he be getting that? LOL nope. And I always have him take the rest of the cake home and he ends up eating it for breakfast. So no way I'm baking him something that bad to eat for breakfast for 3 straight days.

@locavore_mama: So my friend made these white wedding cupcakes for her daughter's birthday party and they were so good! Not too sweet and the texture of the cake was really nice. They were fantastic. I usually get my LO's cupcakes from a fancy bakery where we got our wedding cake but I may make them next time. I made them for an end of year party and while mine weren't as pretty they were tasty!

She has a chocolate cake recipe too...so I'm guessing it's probably similar in the flavor profile - not overly sweet with a nice texture. My friend told me she adds way more heavy cream to make the frosting more like a whipped cream instead of so sugary.

Here's the link

I like Swiss merengue buttercream frosting , which is not terribly sweet.

Being that it is your FIL's birthday though, I sort of feel like he should get whatever cake he wants.. Maybe you could just bring a second cake to give your lo.

FIL's birthday is coming up and he is a choco-aholic. In lieu of MIL picking up a ridiculously sugar laden chocolate cake from the grocery store I'm going to insist I bake him one. This way I can control how sweet it is. With LO older now I highly doubt we will be able to get away with not giving her a small slice when we're all eating cake!

Anyway, do you have a great chocolate cake recipe that is not too sweet. Keeping in mind my 22m rarely gets sweets and when my ILs have given her sweets...oh trust me....we know it without them telling us! LOL

Also any creative "frosting" ideas besides whipped cream? I don't want to do something rich like buttercream or ganache. He's a very simple man with very simple (read: picky) tastes so nothing too "out there" LOL!

Thanks!

P.S. I have read a lot of good things about the SK double chocolate layer cake. Has anyone tried substituting the coffee for something else? is it really sweet? 3 cups of sugar sounds a lot to me but if I cut it down will the cake be too bitter?
