I did not use nuts and had no buttermilk so I made my own alternative. Use a 1 cup measuring cup, squeeze 1 tbsp of fresh lemon juice first then fill rest of the way with milk. Stir and let sit for 2 minutes.</p> <p>The muffins came out REALLY good! All the teachers really liked them as well! It just seems like a lot of extra work for the notes to get passed out and get them back to you. And what kind of equipment it was processed on (whether there were nuts, soy, etc on the shared equipment). Otherwise you are just trusting that the parent got it right and there was no cross-contamintation. I get it but still am bummed.
