I make healthy egg cups often...usually 6 eggs plus some milk and my add ins gets me 8 cups for the week. I bake them at 350 for about 15ish mins. They are super yummy!

Some of my fave add ins: bacon & cheddar, feta/spinach/tomato, green onion & feta, turkey sausage/cheddar.

I have also made ones with bacon rings around the edge...that was a for a brunch...they were also yummy but not as healthy! :)

Thanks everyone. I forgot to buy hashbrowns when I made these so I used a different recipe that puts pieces of wholewheat bread int he muffin tin first before adding in eggs, cheese and any other protein you like.
It turned out so amazingly yummy. Will definitely do it again.

I don’t have a recipe but just want to add to make sure you grease your muffin tin really really well. I didn’t once and I eventually had to throw out the tin because the eggs stuck so bad.

I've made this recipe numerous times for brunches and it always is a huge hit! It's really really good, and I was super unsure at first if I would like it.

I have done lots of different baked eggs - quiche, mini fritattas, egg casseroles etc. and they always turn out great. This dish though is fast and AMAZING.

I have made egg muffin frittata type things, typically with tator-tots in the bottom as a "crust". I love that you can mix and match what to put in them.

@Mrsbells: I do quiche with a potato crust. IF you want a shortcut, you can use hashbrown potatoes from the freezer (but it's better with fresh potatoes)

Something like this https://www.rachaelrayshow.com/recipes/24570_potato_crust_quiche_lorraine/

we do the egg cups a lot to have on hand during the week for breakfast. I just mix eggs and milk and whatever we want in it and them bake at 350 until done, maybe 15mins? I never really time it just make sure there is no liquid left. I usually cook up some hot sausage, casing removed, and add in onion and mushrooms. Add that to the muffin tin, pour the eggs over and then add whatever cheese we have left in the fridge. I use one of the big muffin tins not a cupcake tin and spray it well to help prevent sticking.

@Mrsbells: it is reallllly good. You could also make it in muffin tins for individuals. It’s my go-to for brunch.

This is a family recipe. I’ll include the hand typed cards (its old, lol). It is SO excellent and easy. You can adjust spice to taste

I've done egg cups in the oven for breakfasts for the week.

For a crowd, I'd probably lean more toward making a quiche. I feel like the texture is better than just plain baked eggs.

I’ve made a couple of frittata-style egg dishes in the muffin pan that turned out pretty tasty. It’s prettu simple. My best tip is watch your oven temp and cook time closely, you don’t want them over cooked.

Has anyone successfully tried cooking eggs in the oven? I see so many recipes with eggs or egg frittatas in the oven. My inlaws will be staying with us for a week and i thought cooking eggs in the oven for breakfast would be a fast way to get lots of eggs ready. Any tips or advice would be great
