Was just going to reply with the same link that @runsyellowlites already provided above. You should find lots of good info there.

I would also recommend googling Mark Sission and Robb Wolf, as they are some of the real authorities in the paleo/primal community. I also love the Balanced Bites podcast - Diane and Liz are incredibly knowledgeable but also very friendly.

Remember there's no one paleo diet. It's not like Atkins or something where everyone follows the same plan. The central tenet is eating whole, non-processed foods, no grains, legumes or refined sugar. But that looks different for different people. Some people eat vegetarian paleo, some eat low-carb or very low-carb, some eat fairly "normal" macro breakdowns. It's all about what works best for you and your health (esp. digestive health).

Feel free to write on my wall if you have more questions. I'm definitely not an expert but have done a lot of reading and have some good resources bookmarked.

@Beyond2: I think we're basically paleo since P has a ton of protein intolerances that have caused us to cut dairy & wheat amongst other things but I haven't really looked into it enough to know.

I do know there is a paleo support thread that may have some dinner ideas on it!

http://boards.hellobee.com/topic/paleo-support-thread#post-374810

If nothing else you'll see some of the other bees that are paleo so you can ask them directly! =)

I'm considering trying a paleo diet for a week to see how it goes and how I feel about it. Would anyone following a paleo diet be willing to give a few sample daily menus? What benefits have you noticed from a paleo diet?
