I don't really worry about most things. Today she is a quesadilla (cheese and beans) that I made and cut up last night, hummus spread on a few mini pitas, blackberries, sweet potato "fries", and a cheese stick. It was all packed into containers and left in the fridge last night, and everything seems fine to me this morning.
The one exception here is avocado- I cut that up this morning. it will still brown by the time she gets to it, but a little less at least?

I always pack her lunch the night before. Certain fruits I wait till the morning. Like bananas. Blueberries, strawberries, grapes, watermelon etc are a non issue. Anything that will brown I leave till the morning of.

I use a click -tite container with silicone cupcake liners. I have a laptop lunch box but it was too big to fit in the younger room fridge when the kids were still taking bottles. Now in the toddler room there's room but I just kept using the same container.

@Mrs. Grizzly Bear: I'd like to think they'd say something if the food wasn't good at lunch time.

Also, there are many days I bring most of his lunch home, he eats daycare food instead, and it is still good when I open it up that night. I'll even re-pack it in new containers.

@mamimami: @ALV91711: Thanks! That's what I like to hear! Of course I'm assuming if there's a problem they'd tell me.

I always make everything the night before and it keeps in its containers in the fridge. There just isn't time in the morning to prepare things.

@matador84: Well thanks to the HB classifieds, I have two Laptop Lunchboxes where are super nifty so I thought I'd give those a go. They have little containers you can take out separately. Two of them are open, two of them are closed (with lids) and a little sauce dohickey. I'm just fumbling with the construction! I want to make sure everything is at least in an edible condition if I try to make it before bed the night before, you know?

@Mrs. Grizzly Bear: I just bought a container from target with two compartments and use silicone baking cups for dividers. It makes things really easy to pack several items in little space. Occasionally I also use gladware with the 3 different compartments.

@matador84: Thanks :) I don't know why but I'm obsessing over the lunches. I think it's Bento Box Envy. Everything looks perfect and I want mine to look perfect too. Even though it won't. Guaranteed.

I just pack it all the night before and stick it in the fridge in a container in his lunch box. Fruit I squeeze a little lemon juice on but everything else is usually fine.

@Freckles: I figured fruits would be a morning of thing but I didn't think about the cheese, thanks! What about if it's on a sandwich or something? Do the layers kinda protect it?

Cheese I wrap in Saran Wrap so it doesn't dry out, fruit I put in containers but rinse them the morning of so they don't get soggy.

... What do you make? Like if you're sending cucumbers to daycare/pre-school/school, do you cut them the night before? Or cut them the morning of? How about things like grapes or cheese? Don't they get dry and kinda meh? Or do your containers keep them fresh until lunch time the next day?

I guess I'm asking how to keep things fresh until lunch time to ensure the kids actually eat what I pack for them! :)
