My grandma's pie crust is AWESOME! This is for the top and bottom so if you only want a bottom crust half it. It's very scamp, but it makes such a flaky crust! The trick is not to play with it too much, just mix it enough to get all the ingredients together. And it's easiest to use your hands to mix.

2 cups flour
1/2 oil
1/4 milk

@aprk: I think that was from Cooks Illustrated. Haven't tried it yet either but it's supposed to work!

I'm in the butter/shortening combo camp, along with ice water. I don't bother with my food processor, just use a hand held pastry blender.

@MrsBrewer: I don't have a food processor and i just use my fingers. But i cut up the butter in put it in the freezer before bringing the mixture together. The freezer is my best friend when making crusts.

I know you get a more flaky crust with lard but i've always been partial to the buttery deliciousness of butter crusts. And if you do it right, you'll still get a nice flaky crust without needing lard.

@aprk: I've actually read that too! I haven't tried it, though...mostly because we never have vodka in the house, lol.

Homemade pies are the best! I've read that adding a bit of vodka to the dough is the secret to moist, flaky crust.

@FutureMrsMcK: I have a butter cutter, maybe i could use that to work in the butter and flour together!

@MrsBrewer: I used to use forks, or my fingers to smoosh the butter and flour together. I use a mini food processor now (it's like 2 cups?) so the warmth of my hands won't melt the butter.

I'm trying to make and freeze apple pies for Thanksgiving during E's naps today. So far I've gotten managed to get 4 crusts made and in the fridge, lol.

I use a mixture of straight from the freezer unsalted butter and shortening for my crusts, and pulse it in the food processor...those three things absolutely make my crusts amazingly buttery and flaky and delicious. And for the apple pie crusts I mix in a little bit of cinnamon and nutmeg to the flour before I pulse it all.

Do you make your own pie crusts? Have any secrets you're willing to share? Do you use butter, margarine, shortening, lard or something else?
