<description>&#60;p&#62;If you eat pasta you can add plenty of extra veggies to your sauce without really being able to tell they're in there! I usually chop up some mushrooms, onion, red bell pepper, and throw in some spinach, and let it simmer for a while. Yum!&#60;/p&#62;
&#60;p&#62;ETA: I usually throw baby spinach leaves in whole and let them wilt, but I just re-read your post and said you can't handle the wilted leaves...if you chop up the spinach leaves you might be able to bypass that issue!

2 Avocados, diced and sprinkled with lemon juice to prevent browning&#60;br /&#62;
2 cups Tomatoes, red and yellow cherry variety or equivalent&#60;br /&#62;
1 Small red onion, finely diced&#60;br /&#62;
3/4 cup Feta, crumbled (omit since you're pregnant)&#60;br /&#62;
1 1/2 cups English cucumber, skin on and chopped small dice&#60;/p&#62;
&#60;p&#62;Cilantro Vinaigrette&#60;br /&#62;
6 tblsp olive oil&#60;br /&#62;
2 tblsp sherry vinegar&#60;br /&#62;
1 teasp garlic powder&#60;br /&#62;
2 tblsp fresh cilantro, minced&#60;br /&#62;
1/2 teasp salt&#60;br /&#62;
10 grinds of fresh ground pepper

<description>&#60;p&#62;We do a crispy tofu stir fry.  Lately I've been using baby bok choi, spinach, and broccoli, but you can throw in whatever is floating your boat at that moment.&#60;/p&#62;
&#60;p&#62;I make my sauce with soy, rice wine vinegar, garlic chili sauce, brown sugar, oyster sauce and sometimes a little hoisin (but not usually because I don't like the sauce too sweet). Mix in a few tablespoons of cornstarch to thicken it.&#60;/p&#62;
&#60;p&#62;Throw in some carmelized onions and garlic and follow Mrs. Tricycle's tofu recipe with some brown rice and voila- delicious healthy dinner in about 20 minutes.

<description>&#60;p&#62;I've had a hard time finding healthy food that tastes good to me this pregnancy.&#60;/p&#62;
&#60;p&#62;Lately, lettuce/cabbage/spinach has totally grossed me out. I can't even stomach a salad because it just seems wet and wilty.&#60;/p&#62;
&#60;p&#62;So, I need ideas on ways to incorporate lots of veggies and healthy foods into my meals.&#60;/p&#62;
&#60;p&#62;I've mastered veggies as a side dish with chicken (or fish), so I'm looking for more creative ways to eat healthy. (Casseroles, soups, etc.)&#60;/p&#62;
