We went through something similar with dd but we honestly eventually had to start telling her she needed to pick up and take care of things she wants to keep... and sometimes she just had to be sad/angry. (She's 4, fwiw.) We are still working on this but once we stopped responding so quickly to make sure she had certain items...she stopped throwing as huge/as many tantrums. She's had to learn to go with the flow a little and it's been nice. Not saying this would necessarily work in your case but I know how it feels when they are so picky and it makes things take forever. My dd has always been very particular for whatever reason.
