I just went grocery shopping this morning! My husband or I cook dinner each night, and then we have leftovers for lunch.

Some things I picked up for convenience eating/snacks/quick meals:

whole wheat english muffins
peanut butter
greek yogurt
wheat germ
smoothie stuff (frozen kale, frozen berries, milk)
cheese sticks
cottage cheese
humus (to have w/ carrots from the garden or corn chips)

our meals this week are:
homemade pizza (bacon, spinach, tomatoes, mozzarella, pesto)
Italian-style veggie stew (eggplant, white beans, zucchini, etc.)
chicken w/ tomatoes and basil, rice, kale
BLTs
black bean tacos w/ red cabbage slaw

Garlic chicken from costco....the best complete, ready to eat meal ever!
also, chicken and rice from costco.

Trader joes has a ton of options that are relatively healthy, like frozen organic quesedillas.

How about cheese and crackers? Lunch meat? celery and peanut butter? Popcorn?

Lean pockets? I'm a sucker for those pizza rolls they always advertise for kids, lol. Also, maybe frozen pizza! Trader Joe's has frozen orange chicken tbat's pretty good. Costco has some that also isn't too bad. I would definitely wander the frozen section and see what calls to you. :) Wait until you nurse (if you decide to), I would be STARVING in the middle of the night and had to eat. And a cucumber wouldn't have cut it! ;)

@TurtleDoves: I actually really like Amy's frozen burritos or Wegman's organic burritos -- they're not unhealthy (they're frequently made with whole grain flour, etc and are usually around the 200 calorie mark) -- they're my go to lunch when I'm pregnant and don't want to do deli meat.

If you're looking for convenience food, Kashi's steam meals are also really healthy. It can get expensive, but when you're lazy and starving, it's not a bad option.

Another thing I do sometimes is make english muffin pizzas - just whole grain or light english muffin, topped with pizza (or sometimes spaghetti sauce if that's all I've got) sauce and then some pre-shredded cheese. Toss it under the broiler for a few minutes, and it's a good snack.

I didn't have the desire to cook and freeze during those last few weeks of pregnancy. I nested, but in other ways. Plus, reheating is a PITA since we don't have a microwave. I also wasn't sure if I'd be able to eat cheese and tomato sauce while trying to breastfeed, so I didn't want a bunch of stuff on hand in case I couldn't eat it.

I like to have dried fruit on hand just in case, plus fortified cereals. I also keep frozen fruit on hand to make smoothies. For some reason, I wanted cold, wet things during pregnancy, even though I drank lots of water.

dangit, I knew you guys would say frozen meals! I am just so exhausted these days...:( But I figure when I cook, I can just double the recipes so that I always have leftovers to freeze. That'd work!

I second the frozen meals. On the weekend, I usually made big batches of food to freeeze. My favourite was baked pasta because i could add in all these green veggies (kale, swiss chard, spinach) that made me sick when i ate it on its own.

Almonds were also a great snack to have on hand with a tall glass of milk.

I ate a lot of cereal, cottage cheese with canned fruit (no sugar variety), apple sauce and cheese when I was pregnant...in the middle of the night. And milk, I could not get enough milk.

@Shimmer: I LOVE GF, actually it's a choice thing - I don't have celiacs. I just feel healthier being GF :) I lost a ton of weight when I made the switch too. I order almond flour in bulk from a buying club/co-op and that helps offset the cost. Trader Joes and Whole Foods offer a lot of options too.

@Coco Bee: Ah, ok. It must be tough being GF! I tried it when I was having stomach issues a few years back and the stores had NOTHING I could work with! I've noticed many more GF products in the regular supermarkets lately!

(sorry for the thread jack!)

I second what @Coco Bee said. I've been making and freezing meals for after my LOs get here, so it could easily work for late pregnancy as well!

So far I've made:
-turkey-chicken meatballs
-tons of tomato sauce
-pesto
-chocolate chip zucchini bread
-taco meat
-ground beef to throw into other recipes
-shredded chicken to use in other recipes
-chicken and pork stock
-beef stew to throw into the crock pot
-pancakes

I think that's it. I don't know if I'll get anything else done before Wednesday. It's going to help tremendously! :)

P.S. My midnight snack is always a peanut butter sandwich on whole wheat and a glass of milk. Keeps me full through the night and gives me protein!

I love having turkey meatballs in the freezer (trader joe's has yummy ones!), can make them into a meatball sub or with pasta, we've even thrown them in an omelet :)
Frozen steam in the bag veggie mixes ate also awesome to have on hand when trying to throw a quick well rounded meal together.

Since you love to eat homecooked food why don't you spend a day making big batches of easily freezable food, basically making your own freezer food?

I made my own chicken "nuggets" a few days ago; chicken breasts, almond flour, and eggs. Then cooked them in a frying pan. They were great. Easy to freeze and take out a few and reheat!

I would say frozen veggies - nice and easy.

I am a cook by nature..I like to make my meals and I usually never have anything frozen or anything that is "ready" or on hand. But ever since getting more pregnant and more hungry, I've found that I need ready meals!! It was midnight yesterday and I was staaaaarving and I had to eat.......a cucumber:(
I usually have fruit but didn't...I usually have granola bars but didn't and of course I didn't have anything to stick in the microwave. I am headed to the grocery store soon with a super lame list.
So far I have:
Frozen waffles
Pancakes
Garlic bread
Frozen burritos (no judgey!)
Microwaveable pot pies

Why can't I think of anything?
P.s: I have salad and sandwich fixing but I'm usually in the mood for a warm little meal and too lazy to make a quick salad
