Oh I love quinoa!

Our favorite ways to have quinoa are:

1. Lemon quinoa. Just add a couple of tablespoons of lemon juice and a couple of teaspoons of lemon zest to freshly cooked quinoa. Fresh, bright flavor.

2. Southwestern salad: quinoa with black beans, roasted corn, jalapeno, red onion, cilantro, lime juice and avocado.

3. Greek salad: quinoa with greek olives, feta, red onion, spinach or kale (chopped).

4. Pesto: quinoa with fresh pesto stirred in.

I love this recipe for quinoa salad:
http://www.epicurious.com/recipes/food/views/Quinoa-Salad-232677
It's substantial enough to be a full meal. I buy frozen edamame and I also add in cubed feta cheese.

@lauraeabel: I use the brown rice button on my rice cooker, and I think I use the same liquid ratio as with rice. It comes out so much better than if I cook it on the stovetop.

As for recipes, I make the one @T.H.O.U.: posted, just without the mangoes because I'm not a fan.

It's funny because I was just getting ready to make some quinoa salad for lunch this week. I like this recipe:

http://allrecipes.com/recipe/kale-quinoa-and-avocado-salad-with-lemon-dijon-vinaigrette/

I prefer Bob's Red Mill brand because I haven't had problems with stones in them. I also use the rice cooker. My rice cooker is the cheapie one that only has 1 button so I don't think you can go wrong with whatever setting.

@lauraeabel: My rice maker has all the bells and whistles and I can't remember using any of the fancy settings. But I'd recommend looking up what the right proportion of liquid to quinoa is for the rice cooker method! It's soooo much easier and less intimidating.

I think there are one or two brands that don't require you to rinse like crazy! And I always just make it in the rice cooker, which makes it so much easier.

my go to is plain quinoa on a salad: baby spinach, avocado, grilled chicken, tomato, chick peas, mushrooms and balsamic vingarette (sp?) dressing. om nom

my mama makes this thing where she cooks broccoli and quinoa in the same water then mixes grated cheese in when it's done, so it gets all melty and gooey. pretty tasty too

I love Quinoa in salads. This is hands down the best salad I have ever made. I bring it to every BBQ now! It has chickpeas, cherry tomatos, spinach, cilantro, and avacado and a lemon-cumin vinegrette. Yum! Here is the website, you have to scroll down through the blog for recipe, but sooooooo worth it:

I have a great recipe I've made three times now and am kind of obsessed with/craving all the time!

Another tip would be to use chicken stock (or veggie stock if you're vegetarian) instead of water, add whatever herbs/lemon zest/flavorings after its done, and you MUST RINSE the quinoa before you cook it! Otherwise it has this soapy-tasting coating on it and is not so delicious...I didn't know that for the longest time and was like "why do people like quinoa so much?".

Does anyone have any good recipes for quinoa they would like to share? I've never cooked it before, but I bought a bag of the organic one from Trader Joe's and want to make it as a side dish for dinner tomorrow.

I ate it last night at a restaurant and it tasted like they had used olive oil, lemon juice and some kind of herbs. Simple, but really yummy. Just wanted to see if anyone else has any suggestions. Thanks!
