@MamaMoose: can you use amino acids instead?! It's what I use and it's so yummy.

I agree with everyone that said to use "old" rice. If you don't have any rice made ahead, one trick is to put your newly cooked rice in a thin layer on a pan and put it in the oven on a low temp for a bit until it dries out some. :)

My only advice is to cook with COLD rice and not rice that's newly cooked. Other than that, all the recipes above are excellent and YouTube is your best friend :)

this is one of my favorite fried rice recipes to make, of course omit the kim chee if you're not into that. i think the oyster sauce adds a nice dimension to the dish..

I cook my rice first thing in the morning and let it cool down thoroughly before making fried rice later in the day

I heat up the wok and then add a teeny bit of veggie oil, then I add in any veggies that are already lightly cooked such as mushrooms, carrots, peas, corn etc..
Then I add in the rice and cooked cut up pieces of chicken

Then I add in scrambled eggs that were 90% cooked. and then I add soy sauce and spices

I like Life as a Lofthouse's recipe: http://life-as-a-lofthouse.blogspot.com/2010/09/baked-sweet-and-sour-chicken-with-fried.html

Super easy and super good! I also like adding pineapple to it (fry it in the skillet along with the veggies, etc).

@Alivoo01: I second this advice! If I plan on making fried rice, I'll make a couple extra cups of rice days in advance.

I do exactly what @MungBean: does except I also add butter when I add the soy sauce. Fried Rice is one of my most missed meals since having to go on an MSPI diet.

Using day old rice is best to prevent too wet of a fried rice. Otherwise, it's free reign on what you want to put in it!

I have different types of fried rice I make but the quickest and easiest way is to: 1) little bit of garlic, oil and meat in wok 2) add in whatever veggies I have lying around (usually peas, carrots, broccoli - although I love it with bean sprouts as well), 3) add in cooked rice 4) lastly pour in whisked egg. Season w liberal amounts of soy sauce and sesame oil :)

And yes- I so miss that show!
