An update: We leave next Friday, and I can't wait! Here's our plan:
Day one: Wine tastings around Dundee, including Stoller, and and olive mill tour at Durant
Day two: Spend the day in Portland, including food trucks, Powells, seeing some historic buildings (DH is an architect), The Lents farmers market (I think) and just relaxing. Possibly a hike in Forest Park or seeing one of the gardens
Day three: Drive to Cannon Beach to see the puffins and hang out at the beach, possibly trying to find a place to hike on the way
So many great Portland restaurants have closed recently, including Pok Pok and Beast, so that's sad. But we're considering these restaurants: Jam for breakfast, 3 Doors Down, Kenny and Zuke's, and Screen Door. Any other suggestions for casual dinner or lunch? Or a casual breakfast?

@Chuckles: in door dining is currently open so patio dining definitely should be available.

Given the state of the city - yes I think one day is enough.

@Portboston: and @julie31: Thanks! Those are all great recs. We are hoping that places will be open for patio dining since, even when vaccinated, I'm not sure how we'll feel about eating inside. There's also a little patio at our Airbnb, so we can always get take out. I'm excited for the idea of hiking and wineries. We will be there 4 nights. Do you think that a full day to explore the actual city is enough, especially considering that not everything will be open? That would give us more time for wineries and hiking.

I love browsing at Powell's downtown.

You can check out the Japanese garden, and Crystal Springs Rhododendron Garden.

I would also drive to the Columbia Gorge. Lots of cool hikes along the way (Multnomah falls, Wahclella falls, Beacon rock to name just a few).

And I second the winery suggestion from the previous poster. Stoller is our favorite. It's also not too far from the Evergreen aviation and space museum which is really nice (but I'm an aviation nerd).

Food wise: I haven't dined in downtown Portland since covid. I've googled all my favorite restaurants and they're still all closed to on site dining. But you can still get sweets: blue star donuts, and Salt and Straw is a must-have for ice cream.

I live in Beaverton and work in south waterfront. I used to live in southeast portland but I don’t cross the river much anymore and try to avoid downtown these days. I’m hoping the tide changes with the nicer weather and vaccine but downtown has gotten pretty bad over the last year. Tons of boarded up businesses and the homeless camps have spread. They’re going to start to do sweeps soon so hopefully that helps. If you want to stay downtown, stick to the Pearl area. NW 23rd is nice also, and walkable.
As far as activities - I just went ziplining yesterday at Pumpkin Ridge and it was SO fun. I highly recommend it. Their website says it’s a two-three hour activity but our group was small so it only took about an hour
We have great wineries out towards Sherwood and Dundee. Stoller is super nice as well as Ponzi. I’ve heard good thing about Fairsing also.
The coast is beautiful if you want to take a drive out there. (About 3 hours away).
Mt Hood is a short drive away (about an hour) and you can rent a canoe on Trillium Lake. It’s SO beautiful. Plenty of hikes out that way and in the gorge.
If you’re looking to stay closer to the city, there are also hikes close - forest park has a ton and Tryon State Park is pretty close.
You can hit up the rose garden and check out the pittock mansion. Tons of history there and I think the entry is only $10 for the tour. But you can go on the grounds for free, really nice view up there.
Portland City Grill is great for happy hour. It’s in a tall building and has good views across the river. They open at 4pm and there used to be people waiting in the elevator banks to go up to the restaurant so if you want to check it out get there early!
I don’t get out a ton anymore with Covid so I’m not even sure which restaurants are still around but I can ask a friend of mine who’s active on the dating scene if you would like!

We're going to be heading to Portland in June for our 10 year wedding anniversary  This will be our first time going away in quite awhile since our daughter was born just 4 months before the pandemic started. The plan is to be there for 4 nights. I'd love recommendations for anything - what to do, what neighborhood to stay in, and where to eat. We've never been there before. Thanks!
