My favorite of all the freezer meals I made pre baby was this one. I will definitely be making it again on regular rotation and in preparation for this next baby! It has pasta but could easily be subbed for GF.

Chicken parm freezes well, so does taco meat, and baked ziti. Mrs. Wagon has a series of posts on freezing crockpot meals too.

I made muffins and waffles for the freezer. Breakfast was harder for us than dinner. For dinner, I like to have spaghetti sauce and home made meatballs. We also keep pizza dough in the freezer.

I make beans in the slow cooker and freeze them. I use them like canned beans if I leave them plain. I will often make chili or bean soup with the cooked beans and then freeze that. I find that beans freeze well.

One thing to keep in mind is that freezing pre salted food will often taste like it needs more salt once it is reheated. I suggest waiting until you are reheating to salt so you dont use more then needed.

@youboots: yeah, eggs and cheese and sausage and you could use a GF wrap. Mornings were more hectic than dinner time for us

It was just sliced peppers and onions and cajun sausage with a tomato sauce. Let me find it, I saved it to pinterest somewhere:

@MamaCate: perfect, thanks for the tip!! Sadly so many options have ingredients M can not eat, but I remember seeing GF Mac and cheese last time I was there. Time for me to go read some labels.

@youboots: Just as another option: I thought about making freezer meals before LO but kind of ran out of time and got talked out of it by DH due to our small freezer. Instead we stocked up on some frozen options from trader joes which were also good and less work...

@youboots: I missed the GF part, sorry!

I use corn tortillas and have an amazing recipe that I'll dig up for you. It's not low cal, but it gets rave reviews every time!

@Mrs. Jacks: I have not made GF lasagna. Enchiladas are a great idea. Do you use corn tortillas? Chicken green chilli and jack cheese would be sooooo good. Do you have a recpie? And different enough from Chipolte that I can still have that once a week.

We do lasagne. It does great post-freezer. Green chile enchiladas. We just did a batch of tamales and I know they'll do well post freezer. I always do big batches of won tons for easy soup nights. We're trying to put away as many meals as we can right now!

Last year I tried unsuccessfully to make freezer meals. The only thing that was good that I made again was spaghetti sauce with the works. Everything else was ok at best.

Last night I cooked the turkey carcass in the slow cooker overnight. I kept waking up because it smelled like turkey :) I made 3 soup starter kits with leftover meat and broth for when baby comes this morning.

I will also make several batches of spaghetti sauce.

My plan for post baby is to have a Safeway delivery service set up with the basics... milk, eggs, OJ, fruit etc. Also what's needed to complete the freezer meals veggies for soup, romaine for salad to go with pasta. Then just get the same thing delivered 1x a week for a month plus.

What freezer meals have you made that have been really good? Bonus if it can go in the slow cooker. I just want everything ready so it's easy on M. So far I have 2 1x a week meals, and would like 3 more. We are gluten free.
