This is SO simple and good:

http://crockpot365.blogspot.com/2008/06/crockpot-vietnamese-roasted-chicken.html

I make it with chicken thighs or chicken wings (just made some last night!). For the wings, I dump a bag of frozen chicken wings, double the sauce recipe, omit the oil, and let it go for 3-4 hours on HIGH. Then I throw the wings under the broiler for a few minutes on each side to brown and crisp up and eat with some steamed rice. There are so few ingredients in the sauce, I don't even think you need to do anything ahead but have some chicken and fish sauce on hand.

This recipe is also good:

http://crockpot365.blogspot.com/2008/03/crockpot-apricot-chicken-recipe.html

I imagine you can just dump all the sauce ingredients in with the chicken in a Ziploc bag and freeze them. We also eat this with rice and steamed green beans.

Mrs. Rabbit's parmesan chicken bake has been a hit with us, including company:

http://www.hellobee.com/2014/05/22/chicken-parmesan-bake/

Similarly, we do a baked ravioli lasagna that's just a bag of frozen ravioli covered in sauce and cheese. This is another one where you don't need to make it ahead, just keep a jar of sauce, some cheese, and a bag of frozen raviolis on hand and you can customize however you like - alfredo sauce, add pesto, add ground beef, crumbled sausage, spinach, etc.

Our favorite chicken taco meat is 4-6 boneless chicken thighs, 1/2 packet of McCormick CHICKEN taco seasoning, 1/2 cup of salsa (we use 8oz cans of Herdez salsa - use half for the chicken, use the other half to top the tacos, no waste). Cook for 4-6 hours on LOW, remove chicken and shred the meat. Add a few spoonfuls of the juices as desired for flavor.

I haven't tried these from the Pioneer Woman, but I do love most of her recipes. Also, I watched her make them on her show last weekend - that counts, right?

These black bean enchiladas are good. I don't do the slow cooker version, I just put them in a 9x13 pan like it says at the bottom of the recipe.

@marionberry: Here are my favorites so far!

http://whoneedsacape.com/2013/01/crock-pot-maple-dijon-chicken-thighs/

http://whoneedsacape.com/2012/11/easy-crockpot-mongolian-beef/

http://whoneedsacape.com/2013/01/crockpot-beef-tips-gravy/

http://www.sixsistersstuff.com/2012/09/slow-cooker-freezer-meals-make-8-meals.html
(third recipe down here, chicken broccoli alfredo)

All of the above you'll have to make rice or pasta or mashed potatoes (I do instant) to go with, and maybe a steamed veggie. I make the rice/pasta the night before and store in the fridge. I do the steamed veggies in the bag you stick right in the microwave.

Also, pulled pork! pork shoulder with a 20 oz bottle of root beer, low for 8 hours, pull pork and mix with BBQ sauce, serve on buns with cole slaw! That's not a freezer meal, but easy to throw in the crock pot in the morning.

My only ones so far are freezer bag recipes, the ones that you mix in a bag and freeze flat, then thaw and pour into a slow cooker. Do you want some of those?

I'm about to the stage where I need to get a few freezer meals ready for after birth, but I've heard that many things don't turn out so good in the end (i.e. gross when reheated). So if you've frozen meals and they turned out to be delicious after you had your baby, please share! The easier the better!
