We went to Costco this morning (it was empty!!!) and there were these pre-made crepes in the cheese section. I bought a package, along with some Gruyere cheese to make a cheesy béchamel and that will be our Christmas dinner this year, along with the smithfield ham. I was surprised that that version this year didn't come with the glaze, but I am sure it's just as good without and if I am feeling like it needs something, I can make a bourbon brown sugar concoction.

We didn't get any dessert, though, and I don't have anything in the freezer...not sure what to do there.

Thank you for all the recs! They had a boneless half ham that was perfect size and I got the scalloped potatoes too. And I'll whip up a veg from our freezer for a side. Boom. Love Costco even though it was so so busy today.

Second their prepared mashed potatoes! I heated those up for a recent party, transferred them to one of my serving bowls, and no one believed they weren't homemade. I've also had good luck heating the rotisserie chicken (cover in foil, bake 375 until warm), though it's just as good at room temp. You can't beat the price of the rotisserie chicken.

At Thanksgiving they did a tray that was half a butterflied turkey, stuffing, mashed potatoes, and a bag of gravy - all you had to do was throw it in the oven. It was $30. If they do that again that might be perfect.

Their SPIRAL cut hams are excellent - Niman Ranch makes the ones we get out here. We throw it in the crockpot with a cup of broth or Coke or pineapple juice and let it go for a few hours, then glaze it and run it under the broiler for a few minutes.

Their prepared Mac and cheese is good, as is their mashed and sweet potatoes, but the portions are huge for a small family. Same with the Ham, although it’s easy enough to freeze in portions for another day.

We are not doing a Costco dinner as much as I love Costco because of the portion sizes (it’s just the 4 of us). I got a small piece of boneless ham, a tub each of those prepared like Bob Evans mashed potatoes and sweet potatoes, and stuff for salad. I have some Brussel sprouts and asparagus to cook up if I want an additional veg. DH likes the whole traditional ham dinner for Christmas but I’m currently on a Keto diet and our kids actually don’t like holiday foods, so I’ll probably have ham and veg for me and make a ham tetrazzini with peas for the boys.

As a side we got their scalloped potatoes last year and thought they were really yummy. I like the kale salad too (in the refrigerated veggie section). The frozen lasagna is really really good. The hams are very good but huge. Rotisserie chickens are good but might not be as good for storing for days in the fridge. And I’ve had the pot roast and thought it was really good, in the prepared food section. Just just put in a baking dish and bake I think.

It's not fancy, but if your Costco has the chicken quesadillas in the deli section, those are a fan fav over here. Maybe for Christmas lunch? Separately, their Asian Chopped Salad Kit is amazing.

I was thinking of having ham... are they huge though? I'm not sure I want ham leftovers forever, lol.

Any amazing veggie sides that y'all can think of?

@abbydabbydoodlebug: +1 to the ham and lasagna! Another option would be to buy a bunch of apps and just have an “appetizer meal” (which is my favorite kind! We do t every Xmas eve! Doesn’t sound quite as easy though haha)

Costco has an amazing ham, it's the Smithfield style one. All you have to do is warm it through in the oven, and slice it. Then you can serve that with rolls that you can buy from the bakery.

We're not going to be at my mom's for dinner this year and there's no restaurants open on Christmas day in my area. We're going to Costco tomorrow so I'd love some recs for already made dinners that'll be ok in my fridge or freezer that just need to be warmed up basically. The only dietary restriction we have is no fish or shellfish.
