<description>&#60;p&#62;We ate one of my favs last night!&#60;br /&#62;
Oven Blackened tilapia - cover a baking sheet with foil, brush with evoo. Mix up a teaspoon each of cayenne pepper, oregano, thyme, salt, pepper, an 3 tsp paprika. Brush tilapia filets with olive oil, rub both sides with spices, and bake at 425 for 10-11 minutes.&#60;/p&#62;
&#60;p&#62;While that's cooking, I make 10 minute brown rice and a black bean and corn salad. &#60;/p&#62;
&#60;p&#62;Black bean and corn salad - 1/2 cup chopped red onion, 1 cup tomatoes, 1 can each of black beans and corn (rinsed and drained), a tablespoon of cilantro if you have it, salt, pepper, 1 tablespoon balsamic, 2-3 tablespoons evoo. Can be made ahead. Makes a great dip too :)

<description>&#60;p&#62;My favorite is chicken puttanesca.  Season 4 breasts of chicken with garlic powder, salt, pepper, and oregano.  Sear in an oven-proof pan w/evoo.  After 3-4 minutes, flip the chicken, and throw cherry tomatoes (or grape, whatever I have), kalamata olives (which I seem to always have), and red pepper flakes into the pan.  Transfer to the oven and bake for 15 minutes at 425.  Add a slice/handful of shredded mozz cheese to each breast and back into the oven for another minute or so until the cheese melts.  DONE AND DONE.  I usually serve it with rice (often one of those Uncle Ben's Ready Rice things that microwave in 90 seconds).

Note: Last night I happen to have a can of great northern beans, some leftover baby bella mushrooms, leeks and spinach.&#60;/p&#62;
&#60;p&#62;Literally 30-35minutes from prep to table. I use only what I have in the fridge and pantry. &#60;/p&#62;
&#60;p&#62;I take 3-4 boneless skinless chicken breast and split in half. Season with garlic salt + Pepper. Sear in a oven safe pot with evoo. Remove chicken, add evoo, add garlic. Then saute some veggies (I happen to have onions &#38;amp; celery). Add some kind of tomato; I happen to have tomato paste. Then stock or water then orzo. Add chicken back, slightly immersed. Layer some leafy greens on top if you have. &#60;/p&#62;
&#60;p&#62;Put in preheated 325 oven with lid on for 10-15m depending on thickness of chicken breast. While that's cooking I do clean up.&#60;/p&#62;
&#60;p&#62;Everything is in one pot so minimal clean up after dinner! &#60;/p&#62;
&#60;p&#62;Everything is able to be substituted! &#60;/p&#62;
