We don't do lunch at preschool often but I usually send an individual serving of hummus with something to dip, raisins, other fruit. My LO is super picky so really our only options are hummus or sunflower butter sandwiches.
But things like Mac n cheese can certainly go in a Thermos, it's just a lot more work for you to get it ready in the morning.

Yep. Even food like quesadillas and grilled cheese can go in a thermos. Fill it with boiling water in the morning, let it sit for ten or fifteen minutes, them dump it out and put the food in. Target sells nice little squat ones.
But cold food that is a hit here:
Fruit: oranges, berries, applesauce
Veggie: carrots, cucumber, bell pepper
Cheese stick or TJ whole milk yogurt or avocado
Hummus with crackers
Tortilla with cream cheese and lunch meat cut into spirals
Cold meatballs
Cold sausage
Chicken salad and crackers
Cold cheese omelet

- Sweet sandwiches. PBJ or variations of that, like cream cheese and jelly, bananas and honey, etc. Can be on bread, but can also be spread on tortillas and cut into little sushi/pinwheel type sandwiches.

- Savory sandwiches. Plain cheese sandwich. Hummus and shredded carrot sandwiches/pinwheels.

- Homemade Lunchables - turkey pepperoni or salami, slices of cheese, Ritz crackers. Pita triangles or pita chips with hummus and cucumbers.

- Homemade corndog mini muffins - just bake cornbread mini muffins with a piece of sausage in the middle. Send with a little ketchup or mustard for dipping. They taste fine cold. A variation of this could be pancake mini muffins with breakfast sausage in the middle and a side of maple butter.

- Ditto on the food jar recommendation. You can still pack mac n' cheese or pasta warm. I even know someone who sends a hot dog inside a thermos with hot water and packs a bun so her son can construct a hot dog at lunch time (teacher helps unscrew the jar, but the water isn't too hot by lunch time).

- Vegetarian meals work well, like a string cheese or a Babybel cheese, apple slices with a dip of some kind (PB, sweetened cream cheese, etc), and a Greek yogurt cup.

- Potstickers taste good cold and easy for little hands.

- Tortellini or ravioli can be eaten cold just tossed in some olive oil and Parmesan cheese and it isn't "pasta salad" per se.

We send hot food every day in a thermos. It's still warm at lunch time.

So my son has been attending a preschool where the teacher can heat his lunch for him. I may be switching him to a different preschool (which is where he will attend elementary school the following year), and they do not heat up lunches.

What cold lunch items have worked well for you? Currently the rotation consists of grilled cheese sandwiches, leftover pizza, pasta, mac and cheese, leftover gyro meat - all of which gets heated.

He is not a huge fan of cold cut sandwiches or pasta salad. Am a little worried about this because he can be a picky eater and is thin enough as is.
