&#60;p&#62;then I also saw basically the same recipe on here (I think it's probably everywhere) except she lets it sit and ferment overnight - I tried it for the rolls above and need to try it for the bread soon because I agree it really added to the flavor and texture. Basic method is the same though.&#60;/p&#62;

It’s really flexible — I’m out of rye flakes so we use all rolled oats, and I often (used to) sub in other things for the nuts so DD could bring them to school (generally pumpkin and sunflower seeds for the almonds and sesame seeds).&#60;/p&#62;
&#60;p&#62;I’ve also made banana bread a couple times, tried a few sandwich bread recipes, did one “artisan” type bread, made bagels, a couple different types of cookies, and brownies. Homemade pizza every Friday. Not baking, but we also made a delicious mint chocolate chip ice cream the other day. Somehow it didn’t feel like we were eating that much but it sounds like a lot here! Of course, we’ve been home since DD’s school closed on 3/12 so it’s not like we made all that over a week or something 😜

&#60;p&#62;I made jalapeño cheddar rolls this morning per a DH request. &#60;/p&#62;
&#60;p&#62;I’m making lemon macaroons right now - I’ve never made them and always been intimidated to try but I decided to stop being afraid and make some today since it’s a quiet rainy Saturday at home. I think the macaroons look a bit flat as they rest but I’m hopeful they will turn out and taste great! &#60;/p&#62;
&#60;p&#62;I was going to make bagels but made some pizza dough instead. I may make some bagels tomorrow as they are my favorite.

&#60;p&#62;I have made the Dutch oven bread a fair amount also. I just discovered a rolls version that looks a bit less impressive since you don’t get that crust, but they were so good! &#60;a href=&#34;https://www.budgetbytes.com/focaccia-rolls/&#34; rel=&#34;nofollow&#34;&#62;https://www.budgetbytes.com/focaccia-rolls/&#60;/a&#62; (You need a lot of dusting flour to make the rolls work since it’s so soft)&#60;/p&#62;
&#60;p&#62;Also lots of cookies ... too many cookies! We like the simple pb ones that are 1c sugar, 1c pb, 1 egg (plus add dark chocolate chips if available). Also some standard m&#38;amp;m to use up some Christmas candy I had. I asked dh to make box brownies for my bday and I’m making him a chocolate cake for his (I usually make a chocolate sour cream frosting but might rethink since kid 3 is allergic to milk and will care about having some this year!). &#60;/p&#62;
&#60;p&#62;I tried a copycat starbucks pumpkin bread that was so-so, used up bananas in a standard banana bread and made a lemon yogurt bread which is always delicious. Can’t find the exact link but this is similar. &#60;a href=&#34;https://www.melskitchencafe.com/lemon-yogurt-bread/&#34; rel=&#34;nofollow&#34;&#62;https://www.melskitchencafe.com/lemon-yogurt-bread/&#60;/a&#62;&#60;/p&#62;
&#60;p&#62;The baking has not been good for our waistlines but it is so fun to make things. I was just reading that the flour shortages are real (although there’s plenty of wheat) because people really are just baking a ton vs hoarding.
